2 oranges, peeled and thinly sliced
1 red onion, thinly sliced
4 cups shredded cabbage
1 large apple - peeled, cored, and chopped
¼ cup mayonnaise

Steps:

  • In a small bowl, toss together the cranberries and sugar. Cover and refrigerate.
  • In a large bowl, toss together the oranges, onion, cabbage, apple and mayonnaise until evenly coated. When ready to serve add cranberry mixture and toss again.

1 teaspoon cider vinegar
1/2 teaspoon salt

6 -7 cups green cabbage, finely shredded
1 cup shredded carrot
1/2 cup golden raisin
1/2 cup dried cranberries
1/4 cup sliced green onion
1/2 cup chopped fresh parsley
3 tablespoons flaked coconut
1/2 cup red seedless grapes (optional) or 1/2 cup green seedless grape, sliced lenghtwise (optional)
1/2 cup chopped dried apricot (optional)
1/2 cup light mayonnaise (but not fat free)
1/2 cup light sour cream (but not fat free)
3 tablespoons raspberry vinegar or 3 tablespoons cider vinegar
salt and pepper

Steps:

  • Note: Sometimes certain heads of cabbage are a little bitter, I taste and add a teaspoon or two of sugar if needed; The dried fruit& coconut usually provide enough sweetness to this salad.
  • Mix all vegetables& fruit in a large bowl.
  • Mix the dressing ingredients& pour over.

1 Tbsp. honey
1 Tbsp. lemon juice or white wine vinegar
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/2 tsp. celery seed
1/4 cup plus 1 Tbsp. dried cranberries
2 Tbsp. plus 1 tsp. shelled sunflower seeds or slivered almonds

Steps:

  • WHISK to combine yogurt, honey, lemon juice (or vinegar), salt, pepper, and celery seed to make the dressing. Set aside.
  • ADD coleslaw vegetables to a mixing bowl. Toss in 1/4 cup of the cranberries and 2 Tablespoons of the sunflower seeds. Pour the dressing over the slaw and toss to coat completely. A sweet & sour version of coleslaw that has been a big hit with my family & friends. I found this recipe in my local newspaper and adjusted it a bit to meet our needs. Prepared recipe makes about 12 servings. **Update 2/10** Once I read the review I realized I should have stated that due to the fruits within this coleslaw - it truly does not store well after 2 days. Adjust servings as needed to meet your needs.

1 (16 ounce) bag of shredded coleslaw mix (with red cabbage & carrots, not just plain cabbage)
1 (8 ounce) can pineapple chunks in juice, not syrup (reserve the juice)
1 large granny smith apple (or other tart apple)
1 cup chopped celery
3/4 cup dried cranberries
1 cup light mayonnaise
2 tablespoons cider vinegar
3 tablespoons reserved pineapple juice

Steps:

  • Drain pineapple, reserving the juice in a bowl.
  • Cut the apple into small cubes.
  • Combine the coleslaw mix, pineapple tidbits, cubed apple, chopped celery and dried cranberries in a large bowl - mixing well.
