James Martin's Christmassy cranberry fools are quick to prepare and the recipe is easily increased to serve a crowd

Provided by James Martin

Categories     Dessert

Time 35m

Number Of Ingredients 4

200g cranberries , plus 15 extra to decorate
200g caster sugar , plus 3 tbsp extra to decorate
400ml double cream
1 egg white

Steps:

  • Put the cranberries in a pan with 150g of the sugar. Gently heat until the sugar begins to melt, then cover and cook for 5-10 mins until the berries are soft. Mash with a potato masher and transfer to a large mixing bowl. Stir in 200ml of the cream and chill until cool.
  • In a bowl, whip the remaining cream with the remaining 50g sugar until soft peaks form. Scrape onto the cranberry mixture and fold 1-2 times to very lightly marble. Spoon between 5 small bowls - the fool will marble more as you spoon into the dishes. Cover and chill for at least 2 hrs or up to 24 hrs.
  • Froth the egg white with a fork. Put the extra 3 tbsp sugar on a small plate. Tip the extra cranberries for decoration into the egg white, then drop into the sugar. Shake the plate to roll and coat the berries. Repeat a few times, leaving the sugar to set for a couple of mins between each. Chill until ready to serve.
  • To serve, top each fool with a few sugared cranberries and serve with Cinnamon shortbread (see 'Goes well with').

3 cups granulated sugar
1 cup orange juice
6 cups cranberries
2 tablespoons orange liqueur (optional)
2 cups whipping cream

Steps:

  • In saucepan of boiling water, simmer orange rind until tender, about 15 minutes. Drain through sieve into 2 cup measure; set rind aside. Add enough water to liquid to make 1 1/3 cups.

Tips:

  • Use fresh cranberries for the best flavor. If you can't find fresh cranberries, you can use frozen cranberries. Just be sure to thaw them before using.
  • Don't overcook the cranberries. They should be cooked until they are soft, but not mushy.
  • Let the cranberry mixture cool completely before adding the whipped cream. This will help to prevent the whipped cream from melting.
  • If you don't have a food processor, you can mash the cranberries by hand. Just be sure to mash them until they are smooth.
  • Garnish the cranberry fool with fresh cranberries, whipped cream, or mint leaves.

Conclusion:

Cranberry fool is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up fresh cranberries, and it can be made ahead of time, making it a perfect dessert for busy weeknights. Whether you are looking for a festive dessert for a holiday party or a simple dessert to enjoy after dinner, cranberry fool is a great option.
