GRILLED TURKEY BURGERS WITH CRANBERRY HORSERADISH DRESSING
This is my favorite recipe! We had these at my niece's birthday party, and it was a hit. They are the moistest turkey burgers you will ever have. I usually make a double batch and form into patties and then freeze them. Pull them out when you are ready to grill! Delicious and moist! Best burgers ever!

Steps:
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Stir the cranberry sauce, horseradish, lemon juice, and cumin together in a bowl. Season to taste with salt and pepper, and set aside.
- Mix the egg, celery, and onion in a bowl with your hand until the egg is smooth. Add the turkey, thyme, poultry seasoning, parsley, and bread crumbs; mix until evenly combined. Form the turkey mixture into 8 patties.
- Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place onto the hamburger buns, and top with cranberry sauce to serve.

CITRUS SPINACH SALAD WITH FETA AND CRANBERRY DRESSING
Summer citrus salads are always a must in our Texas heat. This spinach and grapefruit salad is a quick and easy fix that can be whipped up easily with most items you already keep in your pantry/kitchen. I can easily have this as a meal in itself but it works great as a side salad with a cool cucumber/alfalfa/tzatziki 1/2 sandwich. The options are endless and yours to create. Add some sliced strawberries for sweetness and bright, festive color.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
- Toast in the preheated oven until golden and fragrant, 4 to 5 minutes. Remove and set aside.
- Zest orange and reserve. Slice the tops and bottoms of grapefruit and cut along the curves, top-down, to remove skins and piths. Repeat with orange. Cut fruits into segments on a plate or shallow bowl, cutting from connective membranes and catching any extra juices (save juices for dressing). Squeeze segments lightly for extra juice.
- Combine toasted walnuts, spinach, feta cheese, and grapefruit and orange slices in a large mixing bowl.
- Pour grapefruit and orange juices into a measuring cup and add enough cranberry juice to reach 1/3 cup. Whisk in olive oil, turbinado sugar, 1 teaspoon reserved orange zest, parsley, and kosher salt until dressing is thickened. Drizzle over salad. Garnish with any remaining orange zest.

WHOLE WHEAT BREAD, APPLE AND CRANBERRY DRESSING
Having grown up with Pepperidge Farm stuffing, I will always have a weakness for bread stuffing seasoned with sage and thyme, with plenty of chopped onion and celery. I prefer to use 100 percent whole wheat bread, one that isn't at all sweet. A mixed grains bread would also work. The apple and cranberries contribute sweetness, tartness and texture to the classic dressing. I bake this in a gratin dish; you can double the recipe if you want to use it for a stuffing as well, and put half inside the bird. But, moistened with a well seasoned vegetable stock, the dressing makes a great vegetarian side dish. Just be sure to use plenty of stock to moisten, as the problem with most stuffings that are baked outside the bird is that they are dry. Tender apples like McIntosh, Gala, Macoun and Cortland work well in this dish.

Tips:
- Use fresh cranberries. Fresh cranberries have a tartness that pairs well with the sweetness of the other ingredients. If you can't find fresh cranberries, you can use frozen cranberries, but thaw them completely before using.
- Don't overcook the cranberries. Cranberries should be cooked until they are just tender, but not mushy. Overcooked cranberries will lose their shape and flavor.
- Add some orange zest. Orange zest adds a bright, citrusy flavor to cranberry dressing. If you don't have orange zest, you can use lemon zest instead.
- Use a variety of nuts. Nuts add a crunchy texture and nutty flavor to cranberry dressing. You can use any type of nuts you like, such as walnuts, pecans, almonds, or pistachios.
- Make it ahead of time. Cranberry dressing can be made ahead of time and refrigerated for up to 3 days. This makes it a great option for busy holiday meals.
Conclusion:
Cranberry dressing is a classic holiday side dish that is both delicious and easy to make. With its tart and sweet flavor, crunchy texture, and beautiful color, cranberry dressing is sure to be a hit at your next holiday gathering. So next time you're looking for a festive and flavorful side dish, give this cranberry dressing a try.
