2 cups fresh cranberries
1 (15 ounce) can mandarin oranges, drained and chopped
1 cup pecans
1 (15 ounce) can crushed pineapple, drained
2 (3 ounce) packages cranberry-flavored gelatin mix (such as Jell-O®)
¾ cup white sugar
1 cup boiling water
1 cup cold water

Steps:

  • Place cranberries, mandarin oranges, and pecans into a food processor and pulse several times to chop; process mixture until finely ground, about 30 seconds. Transfer mixture into a large bowl.
  • Mix pineapple, gelatin, sugar, boiling water, and cold water together in a separate bowl until gelatin and sugar have dissolved. Pour gelatin mixture into cranberry mixture and stir. Pour into a gelatin mold and refrigerate 8 hours or overnight before serving.

1 (4 ounce) can crushed pineapple
2 (3 ounce) packages strawberry Jell-O gelatin dessert
1 (16 ounce) can canned whole cranberry sauce
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1 cup evaporated milk
1 teaspoon vanilla
1 tablespoon unflavored gelatin
1/4 cup cold water

Steps:

  • Drain pineapple, reserving syrup; add water to syrup to make 2 1/2 cups. Place 1 1/4 cups of syrup mixture in saucepan and bring to a boil. dissolve 1 package of jello in boiling syrup mixture. Add 1/2 drained pineapple and 1/2 cranberry sauce. Mix well and pour into a 9 x 13 dish. Chill until firm.
  • Beat cream cheese with sugar until smooth. Gradually beat in evaporated milk and vanilla. Soften unflavored gelatin in the cold water and heat to dissolve. Blend gelatin into cheese mixture, pour over firm Jello layer. Chill until firm.
  • Boil remaining 1 1/4 cup syrup mixture, dissolve remaining package of jello, add remaining crushed pineapple and cranberry sauce. Chill until room temperature. Pour very gently over cheese layer and chill until firm. Cut into squares.

1/8 tsp. ground cloves
2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add cranberry sauce; stir until blended. Stir in cold water. Pour 2 cups gelatin mixture into 6-cup mold sprayed with cooking spray. Refrigerate 45 min. or until set but not firm.
  • Meanwhile, stir cinnamon and cloves into remaining gelatin mixture. Refrigerate 30 min. or until slightly thickened. Stir in COOL WHIP until blended. Pour over gelatin layer in mold.

This is a recipe that my family enjoys for Thanksgiving or Christmas. With the strawberry gelatin, even children like it. It's fruity and fresh tasting!

1 bag(s) fresh cranberries
1 large seedless orange
1 large red delicious apple, unpeeled, cored and cubed
3/4 cup(s) crushed pineapple
3/4 cup(s) sugar
1 cup(s) orange juice
1/4 cup(s) pineapple juice
1 package(s) (4 serving size) strawberry gelatin
1 cup(s) chopped walnuts or pecans
3 - walnut or pecan halves, for garnish
1 - maraschino cherry, for garnish

Steps:

  • Place cranberries, orange, apple and crushed pineapple in a medium bowl.
  • Add 3/4 cup sugar and mix well; set aside for about 15 minutes.
  • Meanwhile, heat 1 cup orange juice and 1/4 cup water in a saucepan until it comes to a boil.
  • Add Jell-O and stir until it completly dissolves. Remove from heat and allow to cool.
  • Meanwhile drain all liquid from cranberry-fruit mixture, reserving 3/4 cup, discard any remaining liquid.
  • Add 3/4 cup liquid to Jell-O. Chill in refrigerator for about 30 minutes and then add to cranberry-fruit mixture; mixing until well blended.
  • Cover and chill in refrigerator until ready to serve. This salad will set up more as it chills, but will not set up completely. Just before serving add chopped walnuts, mix and garnish with 3 walnut halves and a maraschino cherry or fresh cranberry.

2 cups boiling water
1 (20 ounce) can crushed pineapple

10 ounces Cool Whip
