My friend Susan, in Albuquerque, gave me this recipe. Her sister, Robin, gave it to her, and through a little research, I have found that it came originally from Taste of Home. I should have known that immediately! Love those recipes from TOH! Photo: http://www.tasteofhome.com/Recipes/Winning-Cranberry-Date-Bars

- Cover and cook over low heat for 15-20 minutes or until berries pop, stirring often. (I also mash the cranberries with a fork once they are soft enough and reach the about-to-pop stage).
- Remove from the heat and stir in vanilla; set aside.
- In a bowl, combine flour, oats, sugar, baking soda and salt.
- Stir in butter until crumbly.
- Press half into an ungreased 13-in. x 9-in. x 2-in. baking pan.
- Bake at 350 for 8 minutes. Spoon cranberry mixture over the crust; spread gently. Sprinkle with remaining crumb mixture;pat down gently.
- Bake at 350 for 20-25 minutes or until golden brown. Cool.
- Combine glaze ingredients; drizzle over bars.
- Yield: 4 dozen.
Tips:
- Use fresh cranberries for the best flavor. Fresh cranberries are in season from October to December, but you can also find frozen cranberries in most grocery stores.
- If you don't have a food processor, you can chop the cranberries and dates by hand. Just be sure to chop them very finely, so that they blend well with the other ingredients.
- Don't overmix the dough. Overmixing will make the dough tough. Mix just until the ingredients are combined.
- Chill the dough for at least 30 minutes before baking. This will help the dough to set and make it easier to handle.
- Bake the bars until the edges are golden brown and the center is set. A toothpick inserted into the center of the bars should come out clean.
- Let the bars cool completely before cutting them. This will help to prevent them from crumbling.
- Store the bars in an airtight container at room temperature for up to 3 days. You can also freeze the bars for up to 2 months.
Conclusion:
These Cranberry Date Bars are a delicious and festive treat that are perfect for the holidays. They're made with a simple dough that's filled with a tart and sweet cranberry date filling. The bars are then baked until they're golden brown and the filling is bubbly. They're the perfect combination of tart and sweet, and they're sure to be a hit with your family and friends.
