1 tablespoon butter
¾ cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
2 teaspoons minced onion
¼ teaspoon paprika
¼ cup white wine vinegar
¼ cup cider vinegar
½ cup vegetable oil

Steps:

  • In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.

4 teaspoons finely chopped pecans
1/4 teaspoon celery seed
1 tablespoon reduced-fat mayonnaise
1 tablespoon nonfat plain Greek yogurt
1 teaspoon honey
Juice of 1/2 lemon
1 tablespoon cider vinegar
1 cup finely shredded red cabbage
1/2 green apple, peeled, cored and finely chopped
2 tablespoons dried cranberries
8 large leaves endive

Steps:

  • Heat a small cast-iron skillet over medium heat. Toast pecans and celery seed, stirring constantly, until fragrant, 1 to 2 minutes. 16 ounces cranberries
1 large orange
2 (3 ounce) boxes Jello gelatin, Red
1 cup pecans, chopped
2 cups celery, chopped
3/4 cup sugar

Steps:

  • Chop cranberries and orange after washing first. The orange can be chopped with the peel on and seads in -- really! Cover the chopped fruit with sugar and let set overnight.
  • Drain and save the juice from the cranberry/orange mixture. Add enough water to the juice to make two cups of liquid (1 hot to dissolve the gelatin and 1 cold). Mix the two pkgs of Jello with the the two cups of liquid. Let partially set.
  • Dump in everything -- cranberries, orange, celery, and nuts. Stir well. Chill (that's the salad -- not you).
  • Serve with the meal. Then hide the rest for you. =).
