This yummy recipe is and has been a staple and favorite dish in our family esp. at Thanksgiving and Christmas for many years. We like the tang of the cranberry softened with the other ingredients. It makes a wonderful side dish and can pass as a dessert, too. It would be good anytime you were serving a turkey, chicken or ham dish.

THANKSGIVING CRANBERRY CREAM CHEESE SALAD
Perfectly sweet, perfectly tangy, this cranberry cream cheese salad is perfect for Thanksgiving. The filling has sweet grated apples and tart cranberries that are all held together with cherry Jell-O - it's a delicious combination. But, the Jell-o layer does not have a typical Jell-O texture. The cream cheese topping is sweet...

CRANBERRY CREAM SALAD
So easy, so pretty, and so very tasty. This salad/dessert is very light with a bit of a tang. Very refreshing. Don't save it just for Christmas or Thanksgiving. It's wonderful on a hot summer day. Because of the colour, it fits very well into 'pink' themed occasions like girls birthday parties, Mother's Day, or bridal and baby showers. Unlike others posted, this version has less added sugar and marshmallows. The recipe makes a large amount, but can easily be cut in half for smaller gatherings. Cooking time listed is standing time.

Steps:
- Chop cranberries in a food processor or blender. Don't cut them too finely as you'll want to have larger chucks in there too. If using frozen berries, chop while still frozen.
- Combine cranberries and sugar. Let stand for 2 hours.
- In a large bowl, whip cream until stiff.
- Fold in the marshmallows and pineapple.
- Give the cranberries and sugar a stir, then gently fold it into the whipped cream mixture. Over mixing will turn the entire mixture pink. While it won't change the taste, or make it any less attractive, try to have a few 'ribbons' of cranberry throughout the bowl.
- Spoon into a large glass serving bowl or individual parfait glasses. Chill until ready to serve.
CRANBERRY-PINEAPPLE CREAM SALAD
Steps:
- Prepare Salad Beat cream cheese, mayonnaise and sugar. Add cranberry sauce and pineapple. Blend well. Fold in whipped cream. Pour into 5-6 cup mold and freeze overnight.
Tips:
- Use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they should be thawed before using.
- If you don't have any orange juice on hand, you can use lemon juice instead.
- Add a sprinkle of cinnamon or nutmeg to the salad for a warm, cozy flavor.
- For a sweeter salad, add more sugar to taste. You can also use honey or maple syrup instead of sugar.
- Serve the salad immediately after making it, or refrigerate it for up to 24 hours before serving.
Conclusion:
Cranberry cream salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and flavorful salad, give cranberry cream salad a try!
