12 cups cubed French bread (about 12 ounces)
2 packages (8 ounces each) cream cheese, cubed
1 can (14 ounces) whole-berry cranberry sauce
12 large eggs, lightly beaten
2 cups 2% milk
1/3 cup maple syrup
2 teaspoons ground cinnamon
Dash ground nutmeg
Additional maple syrup, optional

Steps:

  • Arrange half the bread in a single layer in a greased 13x9-in. baking dish; top with cream cheese and spoonfuls of cranberry sauce. Top with remaining bread., In a large bowl, whisk eggs, milk, 1/3 cup syrup, cinnamon and nutmeg until blended. Pour over casserole. Refrigerate, covered, overnight., Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, until a knife inserted in center comes out clean, 50-60 minutes. Let stand 10 minutes before serving. If desired, serve with additional maple syrup.

Just made this today, found the recipe in an older cookbook from a yard sale... My grandson loved it!

8 slice french bread
4 large eggs
1/2 c milk
1 tsp vanilla
2 Tbsp freshly-squeezed orange juice
zest of one orange
butter for the pan
FOR FILLING:
4 oz cream cheese, room temperature
4 Tbsp powdered sugar
6 Tbsp cranberry sauce

Steps:

  • 1. Heat a griddle pan over medium heat. Whisk eggs, milk, vanilla, orange zest and juice together in a shallow dish.
  • 2. Grease pan with butter. Take a slice of french bread and coat on both sides with egg batter and place directly into hot pan. Repeat with other slices.
  • 3. Cook french toast until golden brown on both sides and cooked completely through, about 2-3 minutes per side.
  • 4. Meanwhile, beat cream cheese and powdered sugar together. Carefully fold in cranberry sauce.
  • 5. To assemble, take one slice of hot french toast and spread a layer of filling inside. Top with another slice. Cut stuffed french toast carefully on the diagonal (filling will ooze out) and set on serving plate. Dust with powdered sugar. Serve with maple syrup and butter.
