CITRUS SPINACH SALAD WITH FETA AND CRANBERRY DRESSING

Citrus Spinach Salad with Feta and Cranberry Dressing image

Summer citrus salads are always a must in our Texas heat. This spinach and grapefruit salad is a quick and easy fix that can be whipped up easily with most items you already keep in your pantry/kitchen. I can easily have this as a meal in itself but it works great as a side salad with a cool cucumber/alfalfa/tzatziki 1/2 sandwich. The options are endless and yours to create. Add some sliced strawberries for sweetness and bright, festive color.

Time 25m

Yield 4

Number Of Ingredients 10

½ cup coarsely chopped walnuts
1 orange
2 pink grapefruit
1 (5 ounce) package baby spinach leaves
½ cup crumbled feta cheese
2 tablespoons cranberry juice, or as needed
½ cup olive oil
2 tablespoons turbinado sugar (such as Sugar in the Raw®)
1 teaspoon dried parsley
½ teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
  • Toast in the preheated oven until golden and fragrant, 4 to 5 minutes. Remove and set aside.
  • Zest orange and reserve. Slice the tops and bottoms of grapefruit and cut along the curves, top-down, to remove skins and piths. Repeat with orange. Cut fruits into segments on a plate or shallow bowl, cutting from connective membranes and catching any extra juices (save juices for dressing). Squeeze segments lightly for extra juice.
  • Combine toasted walnuts, spinach, feta cheese, and grapefruit and orange slices in a large mixing bowl.
  • Pour grapefruit and orange juices into a measuring cup and add enough cranberry juice to reach 1/3 cup. Whisk in olive oil, turbinado sugar, 1 teaspoon reserved orange zest, parsley, and kosher salt until dressing is thickened. Drizzle over salad. Garnish with any remaining orange zest.

Time 25m

Yield 3 cups

Number Of Ingredients 7

2 large navel oranges
1 (12 ounce) package fresh cranberries
3/4 cup sugar
1/4 cup water
1/8 teaspoon ground ginger
1/2 teaspoon fresh lemon juice
1/2 teaspoon fresh lime juice

Steps:

  • Remove peel and pith from oranges and cut into large pieces.
  • In a saucepan over medium heat, combine oranges, cranberries, sugar, water and ground ginger.
  • Cook, stirring frequently for 15 minutes.
  • Remove from heat and stir in lemon and lime juices.
  • Cover and chill thoroughly before serving.
  • Ideally made the day before you plan to serve.

Tips:

  • Utilize Fresh Ingredients: For optimal flavor and quality, use fresh cranberries, oranges, and lemons. Avoid using frozen or canned fruits as they tend to lack vibrancy and brightness.
  • Zest Wisely: When zesting citrus fruits, avoid including the white pith as it can impart a bitter flavor. Use a fine grater to obtain the zest without the pith.
  • Control the Sweetness: Adjust the amount of honey or maple syrup based on your desired sweetness level. Taste the dressing before serving and adjust the sweetness as needed.
  • Emulsify for Smoothness: When whisking the dressing ingredients together, pour the oil in a slow, steady stream while continuously whisking. This will help emulsify the dressing, resulting in a smooth and creamy consistency.
  • Chill for Enhanced Flavor: Refrigerate the dressing for at least 30 minutes before serving to allow the flavors to meld and develop. Chilling also helps the dressing thicken slightly, making it ideal for salads.

Conclusion:

Cranberry Citrus Dressing offers a delightful harmony of tangy, sweet, and zesty flavors, making it an excellent complement to various salads and dishes. With its vibrant color and refreshing taste, this dressing is sure to add a burst of flavor to your culinary creations. Experiment with different types of citrus fruits, herbs, and spices to create unique variations that cater to your palate. Whether you're hosting a special occasion dinner or preparing a quick and easy weekday meal, Cranberry Citrus Dressing is a versatile and delicious choice that will elevate any dish.
