1 cup shortening
1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups coarsely chopped fresh or frozen cranberries
2 cups semisweet chocolate chips
2 tablespoons shortening
1-1/4 cups chopped walnuts, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Using paper towels, pat chopped cranberries dry; stir into dough. , Drop dough by rounded teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. 1 c butter or margarine ,soft
1 c granulated sugar
1 tsp vanilla
1 large egg
2 c all purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1 1/2 c semisweet chocolate chips, melted or white chocolate chips
1 1/4 c chopped nuts
2 c fresh or frozen cranberries, chopped
1 or 2 dash(es) red food coloring if desired, for christmas
1 splash of cramberry wine vinegar or cranberry juice

Steps:

  • 1. Preheat oven to 350^. Spray cookie sheets with non stick vegetable spray. (This photo just shows the lobster shaped bottle)
  • 2. Using an electric mixer, beat butter and sugar together in a medium bowl until light and fluffy. Add cranberry vinegar or juice( and food coloring if using) and egg, mix well. (Photo shows cookie with food coloring.)
