This is an incredibly easy recipe - and delicious! Just mix it up before going to work, then pop it in the oven when you get home in the evening. The sauce that forms while baking tastes great on rice.

INDIVIDUAL PORK & CRANBERRY POTPIES

Individual Pork & Cranberry Potpies image

My neighbor gave me this recipe years ago. I love how these pies are different from the usual chicken potpie. The flavor combination just screams fall, but freezing them allows my family to enjoy them any time of year. They are especially good for an easy dinner during the cold winter months. -Mary Shenk, Dekalb, Illinois

1/2 cup milk
1 egg

Steps:

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter, tarter flavor than frozen cranberries. If you only have frozen cranberries, thaw them completely before using.
  • Don't overcook the chicken. Chicken breasts can easily become dry and tough if overcooked. Cook them until they are just cooked through, about 10-12 minutes per side.
  • Use a good quality puff pastry. Puff pastry is the key to a flaky, golden brown crust. Look for a brand that uses all-butter puff pastry.
  • Don't overcrowd the pot pie. If you overcrowd the pot pie, the filling will not cook evenly. Be sure to leave some space between the chicken, vegetables, and cranberries.
  • Bake the pot pie until the crust is golden brown. This will take about 30-35 minutes. If the crust starts to brown too quickly, cover it with foil.

Conclusion:

This Cranberry Chicken Pot Pie is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The combination of cranberries, chicken, and vegetables is hearty and flavorful, and the puff pastry crust is flaky and golden brown. Serve this pot pie with a side of mashed potatoes or roasted vegetables for a complete meal.
