This is my own variation of a dish my mom passed down to me. It can be used with turkey, too... which makes it perfect for THANKSGIVING leftovers!!! I have made this several different ways so please read the extra note at the bottom of the directions. This is my kind of comfort food!

Number Of Ingredients 6

1/2 lb cooked and pulled chicken (i usually use 2 chkn breasts)
10 oz frozen chopped spinach, thawed and drained
1 can(s) cream of mushroom soup
1 box stuffing mix
1 c dried cranberries
1 c shredded cheddar

Steps:

  • 1. Mix all ingredients until soup is well integrated.
  • 2. Heat oven to 350. You can use a 2 1/2 qt baking dish and bake for 35-40 minutes. If you use a 9x11 dish, bake for 25-30 minutes. COVERED. Let stand for 10 minutes, then serve.
  • 3. NOTE: I have made this recipe several different ways, and here are some variations that you may prefer. You can use fresh spinach, but add 1/2 cup of chicken broth to the mix for best results. Works great with your leftover Thxgvg turkey. Give it a try! Use as much or as little meat as you like. 1/2 lb is a guesstimate. My husband likes "more meat" so sometimes I use 3 chicken breasts instead of 2. This is a great casserole to whip up for friends or family when they're not able to take the time to make homemade meals. It reheats well so you can fully cook it, or just refrigerate the mixture in a baking dish and give them directions for cooking. Please try my recipe and share your comments!

Number Of Ingredients 10

4-5 chicken breasts, cooked and cut up. Save broth
1 1/2 (8 oz.) bags of Pepperidge Farm Cornbread Stuffing
1 medium onion, chopped, about 3/4 cup
3/4 c. diced celery
1-1 1/2 c. chicken broth
1 c. dried cranberries
1 can cream of chicken soup
1 can cream of celery soup
1 (8 oz.) pkg. cream cheese, softened
3/4 c. chopped pecans

Steps:

  • Preheat oven to 350 degrees. Mix cornbread stuffing with onions, celery and enough chicken broth to moisten. Combine soups with cream cheese and heat in microwave for a few seconds until it is easy to mix. Set aside. Spray with a non-stick cooking oil. Spread a thin layer of stuffing on bottom of dish. Layer with cranberries. Spread chicken next; then, layer cranberries over top. Spread soup mixture evenly over the chicken. Add more cranberries. Top with remaining stuffing. Sprinkle remaining cranberries and pecans over stuffing. Bake for about 35-45 minutes until dressing is browned on top and bottom. May need to put foil on top if it browns too quickly.

Tips:

  • Use fresh or frozen cranberries for the best flavor. If using frozen, thaw them before using.
  • If you don't have any celery, you can substitute another vegetable, such as carrots or parsnips.
  • Be sure to cook the chicken all the way through before adding it to the casserole.
  • You can use any type of cooked chicken for this recipe, such as rotisserie chicken, leftover chicken, or chicken breasts that you've cooked yourself.
  • If you're short on time, you can use canned cream of chicken soup instead of making your own.
