This is a great, delicious cookie for any time of year. The nuts and cranberries give it a holiday feel, but the orange gives it a summery feel, as well. Store jumbles in airtight container.

Time 1h18m

Yield 4 dozen cookies

Number Of Ingredients 12

1 cup firmly packed brown sugar
1/2 cup butter, softened
1/2 cup sour cream
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1 cup chopped salted cashews
5 ounces chopped dried cranberries
1 1/2 cups confectioners' sugar
3 tablespoons orange juice

Steps:

  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, combine brown sugar and butter. Beat at medium speed until creamy. Add sour cream, egg, and vanilla. Continue beating until mixed well. In a separate bowl, combne flour, baking powder and baking soda. Add flour mixture, a little at a time, and mix well. Stir in cashews and cranberries. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake for 10 to 12 minutes or until lightly browned. Cool completely.
  • Frosting: Stir together confectioners' sugar and orange juice in a small bowl. Drizzle over cooled cookies.

Tips:

  • Use fresh cranberries for the best flavor. Frozen cranberries can also be used, but they should be thawed and drained before using.
  • If you don't have a food processor, you can chop the cranberries and cashews by hand. Just be sure to chop them finely so that they blend well with the other ingredients.
  • The dough for these cookies is very sticky, so be sure to grease your hands well before shaping them. You can also use a spoon to drop the dough onto the baking sheet if you find it too sticky to handle.
  • Bake the cookies until they are just set in the center. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely on a wire rack before storing them. This will help them to keep their shape and prevent them from sticking together.

Conclusion:

Cranberry Cashew Jumbles are a delicious and festive cookie that is perfect for the holiday season. They are easy to make and can be enjoyed by people of all ages. With their tart cranberries, crunchy cashews, and sweet glaze, these cookies are sure to be a hit at any gathering.
