6 oz. dark chocolate (coarsely chopped)
½ cup (4 oz.) unsalted butter
¾ cup (5¼ oz.) granulated sugar
¼ cup (2 oz.) light brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon salt
1 tablespoon cocoa powder
⅔ cup (2¾ oz.) all-purpose flour
¼ cup dried cranberries
1 cup chocolate covered cranberries (or substitute with chocolate chips)
1 cup fresh or frozen cranberries

Steps:

  • Preheat oven to 350ºF. Line with parchment and lightly grease an 8×8" baking pan.
  • In a medium bowl, whisk the flour, salt, and cocoa powder together.
  • Put the chocolate and butter in a large glass bowl and microwave for 30 seconds. Stir, and repeat until the chocolate and butter are completely melted and smooth. Add the sugars. Whisk until completely combined. The mixture should be room temperature.
  • Add 2 eggs to the chocolate mixture and whisk until combined. Add the vanilla and stir. Do not overbeat the batter at this stage or your brownies will be cakey.
  • Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible. Fold in the dried cranberries, chocolate covered cranberries and fresh cranberries.
  • Bake in preheated oven for about 30 minutes or until a toothpick comes out with moist crumbs attached.
  • Cool brownies completely before cutting into 16 equal squares with a very sharp knife.

2 to 3 tablespoons heavy cream

Steps:

  • Grease and flour a 9-inch tart pan with removable sides. Preheat the oven to 350 degrees F.
  • Melt the butter in a bowl set over simmering water. Add 2 cups of the chocolate chips, remove from the heat, and stir until the chocolate melts. Set aside to cool completely.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs, sugar, coffee, and vanilla on medium-high speed until light and fluffy, about 3 minutes. 1 can (16 oz) jellied cranberry sauce
1/2 cup sugar
1 teaspoon grated orange peel
1 1/2 cups whipping cream
3 drops red food color, if desired
1/2 cup sugar
4 teaspoons cornstarch
1 can (11.5 oz) frozen cranberry juice cocktail concentrate, thawed

Steps:

  • Heat oven to 350°F. Wrap foil around outside of bottom and side of 10-inch springform pan to catch drips. Spray bottom only of pan with cooking spray. Heat to rolling boil over medium-high heat. Cook over medium-high heat, stirring frequently, until gelatin is completely dissolved. Stir in orange peel. Cool at room temperature 20 minutes. Cover; refrigerate 1 hour 30 minutes to 2 hours, stirring every 30 minutes, until mixture is slightly thickened.
  • In medium bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Fold into cranberry mixture. Fold in food color. Spoon mixture over cooled brownie base. Cover; refrigerate about 2 hours or until set.
  • Meanwhile, in 1 1/2-quart saucepan, mix 1/2 cup sugar and the cornstarch. Stir in cranberry juice concentrate. Heat to boiling over high heat, stirring constantly. Boil 4 to 5 minutes, stirring constantly, until slightly thickened. Cool 20 minutes at room temperature. Pour sauce into small resealable container. Refrigerate about 1 hour 30 minutes or until chilled.

2/3 cup butter, cubed
4 large eggs, room temperature
1-1/2 cups sugar

1/2 cup coarsely chopped walnuts
FROSTING:
2 cups heavy whipping cream
1/4 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup miniature semisweet chocolate chips
Additional miniature semisweet chocolate chips, optional

Steps:

  • Preheat oven to 350°. Line a 15x10x1-in. baking pan with parchment., In a microwave, melt chocolate chips and butter; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in chocolate mixture. In another bowl, mix flour, baking powder and salt; gradually add to chocolate mixture, mixing well. Fold in walnuts., Transfer to prepared pan.
