1-1/2 cups fresh or frozen cranberries, thawed
1 tablespoon grated orange zest
1/4 cup butter, melted
6 large eggs
4 cups whole milk
3/4 cup plus 1 tablespoon sugar, divided
1 teaspoon vanilla extract
ORANGE CUSTARD SAUCE:
3 large egg yolks
1/4 cup sugar
1 cup heavy whipping cream
1 orange zest strip (1/4 inch)
1/2 teaspoon orange extract

Steps:

  • Preheat oven to 375°. In a greased 13x9-in. baking dish, layer half of the bread cubes, cranberries and orange zest. Repeat layers. Drizzle with butter. , In a large bowl, beat the eggs, milk, 3/4 cup sugar and vanilla until blended; pour over bread mixture. Let stand for 15-30 minutes. Sprinkle with remaining sugar. , Bake, uncovered, for 65-75 minutes or until a knife inserted in the center comes out clean., For sauce, in a small heavy saucepan, whisk egg yolks and sugar. Stir in cream and orange zest strip. Cook over low heat about 15-20 minutes or until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly but gently. Do not allow to boil. 3 cups peeled and diced Fuji apples
1 lemon, juiced
1/2 cup dark brown sugar
1/2 cup dried cranberries
2 cups half-and-half*
6 eggs
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
2 teaspoons vanilla extract
Whipped cream, recipe follows
1 pint heavy cream
1 tablespoon orange liqueur (recommended: Grand Marnier)
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Grease an 11 by 13-inch baking dish with room temperature butter.
  • Place cubed brioche in the baking dish. Set aside.
  • In a large bowl, combine diced apples with lemon juice, brown sugar and cranberries. Pour over bread.

2 teaspoons lemon juice
4 large eggs

Steps:

  • Pudding:.
  • in a medium bowl, toss sliced apples with lemon juice and set aside.
  • in a large bowl, beat the eggs till frothy and light in color. Add the sugar, vanilla, nutmeg and cinnamon and beat till smooth.
  • Stir in the butter, half and half and brandy.
  • Toss the apples, cranberries, pecans with the bread cubes.
  • Place the bread mixture in a greased 9x5 loaf pan (or individual custard cups). Pour the egg mixture evenly over the bread. Cover with foil and weigh down with a bag of rice or dried beans to encourage the bread to absorb the liquid. Refrigerate for 30-60 minutes.
  • Preheat oven to 325. Remove the foil and weights and place the pudding in a larger pan with 1 inch of hot water. Bake for 55 minutes or till set.
  • Increase oven temperature to 425 and bake 10 minutes more, till lightly browned. Serve warm with room temperature sauce.
  • Vanilla Cream Sauce:.
  • Combine milk (or cream) with flour and sugar in a saucepan. Add butter. Heat over medium high heat till it bubbles, stirring. Continue to heat gently till thickened. Stir in vanilla.

water, to cover
4 eggs
cinnamon

7 slices (1 inch thick) week-old Tartine Bakery's Country Bread, crusts trimmed
Unsalted butter, for pan
8 large eggs
3/4 cup sugar
2 cups creme fraiche
2 cups whole milk
1 1/2 teaspoons pure vanilla extract
Coarse salt
1 1/2 cups fresh or thawed frozen cranberries (about 5 ounces)
2/3 cup pure maple syrup

Steps:

  • Preheat oven to 350 degrees. Toast bread on a baking sheet until golden, 5 to 7 minutes.
  • Butter a 5-by-9-inch loaf pan. Whisk together eggs and sugar in a medium bowl. Whisk creme fraiche in another bowl, adding milk gradually to prevent lumps; whisk into egg mixture. Whisk in vanilla and 1/2 teaspoon salt. Soak each slice of bread in custard. Stand slices up next to one another in pan.

1 loaf pumpkin cranberry bread
For ginger custard:
1/3 cup minced peeled fresh ginger
3/4 cup sugar
2 tablespoons water
2 cups milk
1 cup heavy cream
3 large whole eggs
3 large egg yolks
cranberry caramel sauce

Steps:

  • Preheat oven to 350° F. and butter a 9- by 2-inch round cake pan. Line cake pan with a round of wax paper and butter wax paper.
  • Cut enough 1/4-inch-thick slices from loaf to line side of cake pan, trimming slices so that tops are flush with rim of pan. Gently press slices against side of cake pan to make them adhere.
  • Cut enough of remaining loaf, including scraps, into 1/2-inch pieces to measure 5 cups and put in bottom of cake pan.
  • Make custard:
  • In a heavy saucepan bring ginger, sugar, and water to a boil, stirring until sugar is dissolved, and simmer 5 minutes. Add milk and cream and bring just to a simmer. Remove pan from heat.
  • In a heatproof bowl whisk together whole eggs and yolks and add hot milk mixture in a stream, whisking. Pour custard through a fine sieve onto bread pieces in bottom of cake pan, pressing hard on ginger, and coat pieces well (bread pieces will float to surface of custard).
  • Put cake pan in a larger pan and add enough water to larger pan to reach half-way up side of cake pan. Bake pudding in middle of oven 45 to 50 minutes, or until custard is set and a skewer inserted in center comes out clean. Remove cake pan from larger pan and cool pudding on a rack. Chill pudding, covered, until cold, at least 4 hours and up to 1 day.
  • To unmold pudding, run a thin knife around edge of cake pan and dip pan into a bowl of hot water 15 seconds. Invert a large plate over cake pan and invert pudding onto plate. Peel off wax paper and invert pudding right side up onto another large plate. Bring pudding to room temperature and cut into wedges. (If serving pudding warm, transfer wedges to a baking sheet and reheat in a 325° F. oven.)
  • Serve pudding at room temperature or warm with caramel sauce.

6 cups half-and-half
6 cups heavy cream
1/4 teaspoon salt
2 vanilla beans, split lengthwise
18 eggs
3 cups granulated sugar
3 cups cranberries
1/2 cup orange marmalade
Confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees. Cut the crusts off the bread and cut into 1-inch cubes. You should have about 10 1/2 cups of cubes. Arrange on a baking sheet and toast in the oven until light golden brown, about 10 minutes. Watch carefully to make sure they do not brown too much; set aside to cool. Leave the oven on. In a saucepan, heat the half-and-half, cream, salt, and vanilla bean over medium heat, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat. Set aside to infuse 10 to 15 minutes. In a large mixing bowl, whisk the eggs and sugar together. 1 cup whipping cream
2 tablespoons bourbon or 1 teaspoon vanilla extract

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. Place bread and cranberries in baking dish; toss to mix.
  • In large bowl, with wire whisk, beat eggs, brown sugar, cocoa and half-and-half until well blended. Pour over bread mixture. Stir mixture gently with large spoon to coat bread with liquid. Let stand 10 minutes. Stir mixture.
  • Bake uncovered 45 to 50 minutes or until knife inserted in center comes out clean.
  • In 1-quart saucepan, mix granulated sugar, butter, baking chips and whipping cream. Cook over medium heat 3 to 4 minutes, stirring frequently, until slightly thickened and smooth. Remove from heat; stir in bourbon (sauce will be thin). Serve sauce over warm bread pudding.

Great dessert for the winter months. Cranberries and caramel sauce is a great combo ! Found this recipe in my local supermarket behind the fresh cranberries.

1 c fresh cranberries
1/2 c orange marmalade
4 slice unfrosted cinnamon bread, toasted
4 eggs, slightly beaten
1 1/2 c milk
1/2 c sugar
1/2 tsp vanilla extract
1/2 c purchased caramel sauce or caramel ice cream topping, warmed
i have added a caramel sauce recipe below if you choose to make your own.

Steps:

  • 1. Preheat oven to 325 degrees F. In a small saucepan combine cranberries orange marmalade and 2 tablespoons water. Bring to boiling, reduce heat. Simmer uncovered 8-10 min. or until cranberries pop, stirring constantly.
  • 2. Meanwhile, cut bread into 1" pieces. Place in ungreased 8x8x2" baking pan.
  • 3. In medium mixing bowl stir together eggs, milk, sugar and vanilla. Stir in cranberry mixture. Pour over bread in pan.
  • 4. Bake 50-55 minutes or until a knife inserted near center comes out clean. Cool slightly. Serve warm with warm caramel sauce or ice cream topping. Serves 6
  • 5. If you would rather make your own Carmel Sauce: CARAMEL SAUCE 1/2 c brown sugar 1/2 c sugar 1 Tbsp flour 1/2 c cream or half & half 1/2 c butter 1 tsp vanilla Caramel Sauce: Mix sugars and flour together in a saucepan. Add cream, butter and vanilla. Bring to a low Boil, and boil 2 minutes. Serve warm over Cranberry Bread pudding. The sauce keeps well..you can refrigerate, and warm sauce as needed.

3 c 2% or whole milk
2 c eggnog
1/2-2/3 c sugar, keep in mind the eggnog is full of sugar
7 eggs
2-3 tsp cinnamon, keep in mind the eggnog is full of spice
1 dash(es) nutmeg, optional
1 1/2 tsp vanilla extract
8 c 1 lb. loaf of French bread
2/3 c dried cranberries
3 Tbsp butter

Steps:

  • 1. Heat oven to 350 degrees. Butter the bottom and sides of a 13 x 9 casserole/baking pan. Set aside.
  • 2. Tear by hand or chop the French bread into 2 inch cubes. Evenly layer cubed bread on the bottom of the buttered pan.
  • 3. In a saucepan, over medium heat, warm milk, eggnog and butter along with cranberries. Set aside.
  • 4. In a large bowl mix sugar and cinnamon together. Add eggs, vanilla and stir.
  • 5. Slowly, while stirring, add the lukewarm milk mixture to the egg mixture. Set aside.
  • 6. Pour batter on top of bread. If using cranberries, you may spread them out at this time. Bake 45-50 min. The top should be golden. Enjoy!

CREAMY CRANBERRY BREAD PUDDING

8 ounces bread (bakery challah or brioche)
2 cups half-and-half
2 cups heavy cream
1 pinch salt
1 vanilla bean, split lengthwise
6 eggs
1 cup sugar
1/2 cup orange juice
1 cup dried cranberries
powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the crusts off the bread and cut into 1 inch cubes. You should have about 3 1/2 cups of cubes.
  • Arrange bread cubes on a baking sheet and toast in the oven till light golden brown, about 10 minutes.
  • Let bread cubes cool but leave oven on.
  • Over medium heat in a saucepan heat the half and half, cream, salt and vanilla bean, stirring occasionally.
  • When it reaches a fast simmer(don't let it boil), turn off the heat.
  • Set the mixture aside for 10-15 minutes for the vanilla to infuse.
  • In a large mixing bowl, whisk the eggs and sugar together.
  • Whisking constantly, gradually add the hot cream mixture.
  • Strain this into another large bowl, to smooth the mixture and to get rid of the vanilla bean.
  • Add the bread cubes, toss well, and let soak until absorbed. Fold the mixture occasionally to ensure even soaking.
  • In a small saucepan, bring the orange juice to a simmer. Add the cranberries and simmer until plumped and softened, about 5 minutes.
  • Drain cranberries and set aside.
  • Divide the cranberries into 6 ramekins, custard cups or dessert cups, or just on the bottom of a deep baking dish, reserving enough cranberries to sprinkle on top of pudding.
  • Next add the soaked bread and then any remaining custard in the bowl over the bread.
  • Sprinkle with remaining cranberries.
  • Arrange the 6 little puddings or the one large one in a hot water bath.
  • Bake until just set and golden brown on top, about 30 minutes for the little puddings, and 40-45 for the large one.
  • Serve warm or chilled, dusted with powdered sugar!

APRICOT-CRANBERRY BREAD PUDDING

6 c diced sour dough french bread
1 qt whole milk
1 pt cream
7 whole eggs
4 egg yokes
1 c sugar
2 tsp vanilla
1/2 c diced dried apricots
1/3 c diced dried cranberries
pinch of salt

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Butter a 9 x 12 shallow glass baking dish.
  • 3. Sprinkle the diced bread over the bottom.
  • 4. Combine milk, cream, eggs, additional yolks, sugar, salt and vanilla. Mix well.
  • 5. Pour this mixture over the diced bread using a strainer.
  • 6. Sprinkle all the diced dried fruits evenly over the top.
  • 7. Place this baking dish into a larger pan filled halfway up the sides with water. Be careful when you move to the oven that none of the water washes over into your pudding mixture. Or you can pour the water into the empty pan as soon as placing both pans into the oven.
  • 8. Bake for 40 to 50 minutes.
  • 9. NOTE: Will not work or cook properly without the water bath step. Also do not substitue the bread wtih another bread. You can cut away some to the crust from the sour dough french bread if you feel like it has too much crust.

8 c artisan cranberry walnut bread (can use other breads such as raisin, cinnamon or plain white bread)
2 c heavy whipping cream
2 c whole milk
1/2 c unsalted butter
4 eggs
4 tsp vanilla extract
2 Tbsp ground cinnamon
SAUCE
2/3 c heavy cream
2 c granulated sugar
1 c unsalted butter
4 Tbsp rum extract (I use Adam's Jamaican rum extract)

Steps:

  • 1. Preheat your oven to 350 degrees.
  • 2. Coat a large casserole dish with non-stick baking spray, I use Baker's Joy.
  • 3. Cut bread into 1" pieces, placing them in a large mixing bowl.
  • 4. Mix whipping cream and milk together. Stir in 1/2 cup of unsalted butter and cook over a medium heat until butter is melted.
  • 5. Stir this milk mixture into the bowl of bread cubes. Let mixture stand for 20 minutes so liquid can absorb into bread pieces.
  • 6. Beat eggs slightly to blend. Add vanilla and ground cinnamon.
  • 7. Pour into mixture. Mix well.
  • 8. Pour into prepared baking dish.
  • 9. Bake for 1 to 1 1/2 hours until bread pudding is set and golden brown.
  • 10. SAUCE: Put heavy cream, butter, and sugar in a saucepan. Cook on low heat until sugar is dissolved. Do not boil. Add rum extract and stir well.
  • 11. Pour rum sauce over hot bread pudding just before serving.
  • 12. Keep refrigerated in separate containers and heat before serving leftover bread pudding.

PUMPKIN CRANBERRY BREAD PUDDING

8 c or 1 lb loaf, pumpkin bread, cut into 1-inch cubes
1 handful whole cranberries (optional)
6 large eggs
1 1/2 c whipping cream
2 c whole milk
1 1/4 c sugar
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/4 tsp ground cinnamon
1 tsp pure vanilla
AMARETTO SAUCE INGREDIENTS
1/2 c whipping cream
1/2 c whole milk
3 Tbsp sugar
1/4 c amaretto liqueur
2 tsp cornstarch
PUMPKIN CRANBERRY BREAD INGREDIENTS
1 can(s) (15 oz) pumpkin puree, not pumpkin pie mix
4 large eggs
1/2 c canola or vegetable oil
1/2 c apple sauce
1/2 c apple juice or water
2 c white sugar
1/2 c light brown sugar
3 1/2 c all purpose flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1 tsp pure vanilla
1 c dried cranberries (craisins)
walnut bits for topping (optional)

Steps:

  • 1. Lightly butter or butter flavor spray a 13 by 9 by 2-inch baking dish and put the pumpkin bread cubes and cranberries into the dish.
  • 2. In a large bowl, whisk the eggs, cream, milk, and sugar, nutmeg, cloves, ginger, cinnamon, and vanilla to blend then pour this mixture over the bread cubes. Press the bread cubes gently to submerge.
  • 3. Let stand for 30 minutes, occasionally pressing the bread cubes into the custard mixture. (Recipe can be prepared up to this point 2 hours ahead. Cover and refrigerate.)
  • 4. Preheat the oven to 350 degrees F. Bake until the pudding puffs and is set in the center, about 45 minutes. Cool slightly. Spoon the bread pudding into bowls, drizzle with the warm amaretto sauce, and serve.
  • 5. *Tip: For individual servings, pile bread pudding into large muffin pans and bake for about 30-40 minutes. Test for doneness as soon as top of bread pudding begins to toast.
  • 6. AMARETTO SAUCE
  • 7. Bring the cream, milk, and sugar to a boil in a heavy small saucepan over medium heat, stirring frequently.
  • 8. In a small bowl, mix the amaretto and cornstarch to blend and then whisk into the cream mixture. Simmer over medium-low heat until the sauce thickens, stirring constantly, about 2 minutes.
  • 9. Set aside and keep warm. (The amaretto sauce can be made 3 days ahead. Cover and refrigerate. Rewarm before serving.)
  • 10. PUMPKIN CRANBERRY BREAD
  • 11. Pan Options: 3 7x3 inch loaf pans; 2 9x5 loaf pans; 2 8x4 loaf pans and 1 pan of mini size muffins; 7 mini loaf pans; 1 large bundt cake and 6 large muffins. Preheat oven to 350 degrees F. Grease and flour three 7x3 inch loaf pans.
  • 12. In a large bowl, mix together pumpkin puree, eggs, oil, applesauce, apple juice or water, vanilla, and sugars until well blended.
  • 13. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and dried cranberries (and baking soda if making muffins). Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans. Top loaves with walnut bits (optional).
  • 14. Bake for about 50 minutes, less for mini-loaves and muffins, in a preheated oven and check for doneness. It will probably take more time depending on the size pan you use.
  • 15. Always do the toothpick test rather than rely on cooking times. When the toothpick comes out clean they are done. Don't overcook them! Remember, cooking times are approximate because everyone's oven cooks differently.
  • 16. If your oven heats unevenly, turn the pans part way through the cooking process for even cooking. If your oven cooks a little hot and the inside isn't done yet according to the toothpick test, but the tops are done and you don't want them to over-brown, put a foil tent on top until the bread is done.
  • 17. *Note: If making muffins instead of bread, add 1/2 tsp baking powder to the recipe.

Tips:

  • Use fresh cranberries: Fresh cranberries add a bright, tart flavor to this bread pudding. If you can't find fresh cranberries, you can use frozen cranberries that have been thawed and drained.
  • Don't overmix the batter: Overmixing the batter can make the bread pudding tough. Mix the batter until the ingredients are just combined.
  • Bake the bread pudding until the center is set: The bread pudding is done baking when the center is set. A toothpick inserted into the center should come out clean.
  • Serve the bread pudding warm or at room temperature: Cranberry bread pudding is delicious served warm or at room temperature. You can top it with whipped cream, ice cream, or a dollop of sour cream.
