Yield Makes about 24 hors d'oeuvres

Number Of Ingredients 6

2 large sweet potatoes (1 1/2 lb total)
6 cups vegetable oil
1 confit duck leg (5 1/2 oz), skin and bone discarded and meat finely shredded
Cranberry black pepper chutney
Special Equipment
a mandoline fitted with fluted blade; a deep-fat thermometer

Steps:

  • Adjust fluted blade of mandoline to an opening of slightly more than 1/8 inch. Peel sweet potatoes, then slice crosswise on mandoline, turning each potato at a 90-degree angle after each slice to produce a waffle pattern. (It may take a few tries to get the pattern right.)
  • Heat oil in a 4-quart heavy saucepan over moderate heat until it registers 300°F on thermometer. Fry potatoes, 6 to 8 slices at a time, stirring and turning them frequently, until golden and crisp, 2 1/2 to 3 minutes. Transfer with a slotted spoon to paper towels to drain and return oil to 300°F between batches. Season gaufrettes lightly with salt while still warm.
  • Heat a 10-inch nonstick skillet over moderate heat until hot and cook duck, stirring, until any excess fat is melted and edges are slightly crisp, about 2 minutes.
  • Top each gaufrette with some duck and a scant 1/2 teaspoon chutney.

Yield Makes 2 1/2 cups

Number Of Ingredients 8

1 (12-ounce) package fresh or frozen (don't thaw) cranberries
1 cup unsweetened pineapple juice
3/4 cup packed light brown sugar
1/2 cup golden raisins
1/2 cup apple cider vinegar
1/2 teaspoon hot red-pepper flakes
1/4 teaspoon ground cloves
1/2 teaspoon salt

Steps:

  • Combine all ingredients in a 2-quart heavy saucepan.
  • Simmer over medium heat, stirring occasionally, until cranberries burst, then collapse, about 12 minutes.
  • Transfer to a bowl and cool, uncovered (chutney will thicken as it cools).
  • Chill chutney, covered, at least 8 hours for flavors to develop.

Tips:

  • Choose fresh, ripe cranberries for the best flavor.
  • Use a sharp knife to chop the cranberries to avoid bruising them.
  • Toast the black peppercorns in a dry skillet over medium heat until fragrant, about 2 minutes. This will bring out their flavor. Allow them to cool before grinding.
  • Use a food processor to finely chop the onion, garlic, and ginger. This will help them blend into the chutney smoothly.
  • Cook the chutney over medium heat, stirring frequently to prevent it from sticking to the pot. The chutney is done when it has thickened and darkened in color, about 30 minutes.
  • Let the chutney cool completely before storing it in a glass jar or container. The chutney will keep in the refrigerator for up to 2 weeks.

Conclusion:

Cranberry-Black Pepper Chutney is a delicious and versatile condiment that can be enjoyed with a variety of dishes. It is perfect for adding a sweet, tangy, and slightly spicy flavor to grilled meats, poultry, fish, and vegetables. It can also be used as a topping for sandwiches, wraps, and salads. Cranberry-Black Pepper Chutney is a great way to add a touch of homemade goodness to your meals.
