1 pound cranberries (about 4 cups), thawed if frozen
2 oranges
2 cups sugar
1 teaspoon ground coriander
Kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Put the cranberries in a saucepan. Remove wide strips of zest from 1/2 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
  • Remove from the heat and remove the orange zest; stir in the vanilla. Transfer to a blender and puree until smooth. Strain through a fine-mesh sieve into a serving dish, pushing the sauce through with a rubber spatula. Refrigerate until set, at least 3 hours.

Number Of Ingredients 8

1 box of Raspberry gelatin (strawberry works fine too) (box that provides 8 and 1/2 servings)
2 cups boiling water
1 apple cored and chopped
2 - 8 oz cans of pineapple tidbits. Drained, but reserve the juice for later.
1 - 11 oz can mandarin oranges, drained.
1/2 cup pecans, chopped into small (use more if you especially like nuts - I usually do)
1 12 oz package of fresh cranberries
1 cup granulated sugar

Steps:

  • In large bowl, dissolve jello in 2 cups boiling water.
  • Add pineapple juice to measuring cup and add water until you have 1.5 cups pineapple juice and water combined.
  • Add pineapple juice/water to jello, stir.
  • Place cranberries and sugar into food processor and pulse till sugar is thoroughly combined and the cranberries are in small pieces
  • Add chopped apple, pineapple, mandarin oranges, nuts and cranberry pieces to large serving container..
  • Add liquid jello to dish and stir everything around.
  • Place in fridge.
  • When ready to serve, with a fork, stir cranberry jello salad around with a fork, breaking up the jello.
  • Transfer to a serving dish and enjoy!

2 (3 ounce) packages lemon-flavored gelatin mix (such as Jell-O®)
1 ½ cups boiling water
2 cups cold water
1 (12 ounce) package fresh cranberries
1 cup white sugar
1 cup crushed pineapple, drained
¾ cup chopped celery
½ cup chopped walnuts

Steps:

  • Dissolve lemon gelatin in boiling water in a bowl; stir in cold water. Chill in refrigerator until partially thickened, 30 to 40 minutes.
  • Chop cranberries in a food processor and mix sugar into cranberries, pulsing once or twice to combine. Let cranberry mixture stand a few minutes to let sugar dissolve. Stir cranberry mixture, pineapple, celery, and walnuts into gelatin. Pour into a gelatin mold or serving dish. Refrigerate until fully set, about 4 hours.

2 (3 ounce) packages black cherry-flavored gelatin mix (such as Jell-O®)
1 ¾ cups boiling water
1 (16 ounce) carton sour cream

Steps:

  • Mash jellied cranberry sauce in a 3-quart bowl. Stir gelatin mix thoroughly into cranberry sauce. Pour boiling water into mixture and stir until gelatin has dissolved completely, about 3 minutes.

2 cups boiling hot water
2 cups cold water
2 14 oz cans whole berry cranberry sauce
2 20 oz cans crushed pineappple ((NOT pineapple chunks))
1 cup walnuts (toasted and chopped)

Steps:

  • In a large measuring cup, mix the 2 (6 oz) packages of raspberry Jell-O powder with 2 cups of boiling water using a whisk. Then add 2 cups of cold water and whisk until everything is dissolved.
  • In a large bowl, combine the 2 (14 oz) cans of whole berry cranberry sauce, 2 (20 oz) cans of crushed pineapple (juice included), and 1 cup of toasted chopped walnuts. Then pour in the jello and stir until well mixed in.

1 large can crushed pineapple, packed in juice, drained
1 can(s) whole cranberry sauce
2 small packages gelatin, raspberry, cran-raspberry, whatever your family likes
2 c boiling water

Steps:

  • 1. Drain pineapple; set aside.
  • 2. Mix gelatin with 2 cups boiling water until gelatin is dissolved. Add drained crushed pineapple and whole cranberry sauce.
  • 3. I kind of squish the cranberry sauce with my hand to break it up. Mix well.
  • 4. Pour into gelatin mold. Let set until firm. Unmold onto a lettuce lined plate and serve. I usually make my gelatin a couple of days ahead, just to make things easier for me on the big day.
