CRANBERRY AVOCADO SALAD RECIPE

Cranberry Avocado Salad Recipe image

Number Of Ingredients 12

12 oz. baby mixed greens, spinach, and/or arugula
2 medium avocados, sliced
¾ cup dried cranberries
¾ cup roasted almonds
2/3 cup extra virgin olive oil
1 tbsp. poppy seeds
½ tsp. paprika
2 tsp. dried mustard
1 tablespoon minced sweet onion
1/4 cup white balsamic vinegar
¼ cup raw honey (optional)
Sea salt and freshly ground black pepper

Steps:

  • In a bowl, combine all the ingredients for the dressing, season to taste, and stir well. Place the greens in a large bowl. Add the avocado and dried cranberries. Pour ¼ cup of the dressing over the salad and toss gently. Scatter the almonds over the salad. Serve with some extra dressing.

Tips:

  • Choose ripe avocados: The avocado in this salad should be ripe but not mushy. A ripe avocado will yield to gentle pressure when squeezed.
  • Use fresh cranberries: Fresh cranberries add a tart and festive flavor to this salad. If you can't find fresh cranberries, you can use frozen cranberries that have been thawed.
  • Make your own dressing: The homemade dressing in this salad is easy to make and adds a delicious flavor. You can also use a store-bought dressing if you prefer.
  • Add some crunch: Adding some chopped nuts or seeds to this salad will give it a nice crunch. Some good options include walnuts, pecans, almonds, or sunflower seeds.
  • Serve immediately: This salad is best served immediately after it is made. The avocado will start to brown if it sits for too long.

Conclusion:

This cranberry avocado tossed salad is a delicious and healthy way to enjoy the flavors of the season. It is perfect for a light lunch or dinner, and it can also be served as a side dish. With its beautiful colors and flavors, this salad is sure to impress your guests.
