Tips:

  • Choose fresh and ripe cranberries and apricots: This will ensure the best flavor and texture in your coffee cake.
  • Don't overmix the batter: Overmixing can result in a tough, dense coffee cake. Mix just until the ingredients are combined.
  • Use a bundt pan or tube pan: This will allow the coffee cake to rise evenly and prevent it from becoming too dense.
  • Bake the coffee cake until a toothpick inserted into the center comes out clean: This will ensure that the coffee cake is cooked through.
  • Let the coffee cake cool completely before glazing: This will help the glaze set properly.

Conclusion:

Cranberry Apricot Coffee Cake is a delicious and easy-to-make breakfast or brunch treat. The combination of tart cranberries and sweet apricots is perfect, and the crumbly topping adds a nice touch of texture. This coffee cake is sure to be a hit with your family and friends.
