Provided by Food Network

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 12

1 orange, juiced and zested
1 lemon, juiced and zested
3 cups port
12 ounces fresh cranberries, washed
1/2 medium red onion, diced
1-ounce fresh ginger, peeled and cut into julienne
3 tablespoons dark brown sugar
1 teaspoon salt
1 teaspoon white pepper
1/2 teaspoon ground cinnamon
3 tablespoons orange liqueur
4 Rome Beauty apples

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small saucepan, heat the orange and lemon juices with 1/2 cup of the port. Add the zest and cook until tender, about 10 minutes. Reserve.
  • In a medium saucepan, combine the cranberries, onion, 2 cups port, ginger, brown sugar, salt, pepper, and cinnamon. Over medium-high heat, cook until the relish thickens, 15 to 20 minutes, stirring occasionally. Stir in the remaining 1/2 cup port, the orange liqueur, and the reserved orange and lemon juice and zest mixture. Set aside.
  • Cut off the top 1/4-inch of each apple. Using a melon baller, remove the core of the apple, being careful not to pierce the sides or bottom of the apples, to make apple "cups". Place the apple cups in a small baking dish. Spoon the cranberry relish into the apples. Spoon the excess relish around the apples. Cover with foil and bake until apples are tender, about 30 to 45 minutes.

CRANBERRY-TANGERINE SAUCE WITH APPLES & ALMONDS

Cranberry-Tangerine Sauce With Apples & Almonds image

This is my favorite cranberry sauce from "Fruit Cookbook" by Nicole Routhier. My sister and I both love cranberry sauce and try out two new recipes every Thanksgiving. This year I'm not going to bother, since this is the only one I like to eat plain (with a spoon)! The tangerines give it a wonderful flavor, even better than oranges and combine great with the Granny apple.

Tips for the Best Cranberry Apples:

  • Use fresh, ripe cranberries. Fresh cranberries are plump and firm, with a deep red color. Avoid cranberries that are soft, shriveled, or have any signs of mold.
  • Choose the right type of apple. For this recipe, we recommend using a tart apple, such as Granny Smith or Honeycrisp. These apples will hold their shape when cooked and provide a nice contrast to the sweetness of the cranberries.
  • Don't overcook the cranberries. Cranberries only need to be cooked for a few minutes until they are softened and have released their juices. Overcooking will make them mushy.
  • Add a little spice. A pinch of cinnamon, nutmeg, or ginger can add a warm, festive flavor to the cranberry apples. Experiment with different spices to find your favorite combination.
  • Serve warm or cold. Cranberry apples can be served warm as a side dish or topping for oatmeal, yogurt, or pancakes. They can also be chilled and served as a refreshing salad or snack.

Conclusion:

Cranberry apples are a delicious and versatile dish that can be enjoyed in many different ways. Whether you serve them warm or cold, as a side dish or a snack, cranberry apples are sure to be a hit. So next time you're looking for a festive and flavorful dish, give cranberry apples a try!
