1 1/2 tablespoons margarine
2 apples, pared and cored
1 cup fresh cranberries
5 tablespoons dark brown sugar
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon, Ground
1 teaspoon granulated sugar

Steps:

  • Preheat oven to 375F.
  • Place gingersnaps and margarine in food processor; process until finely ground.

4 lbs golden delicious apples, peeled, cored and thinly sliced
1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
1/4 cup crystallized ginger, chopped
3/4 cup sugar
1/4 teaspoon salt
3 tablespoons flour
1 tablespoon lemon juice

Steps:

  • In a large bowl, stir together the apples, cranberries, crystallized ginger, sugar, salt, flour, lemon juice.
  • Pour into 9" deep dish pie shell lined with pastry.
  • Cut remaining crust into strips and weave on top of pie to create lattice top, or place whole crust onto top and cut slits in top for venting.

4 cups sliced peeled tart apples
2 cups fresh or frozen cranberries
2 tablespoons butter

Steps:

  • Preheat oven to 425°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim.
