1/2 cup jellied cranberry sauce
1/4 cup olive oil
2 tablespoons sugar
1 tablespoon orange peel, grated
2 tablespoons rice vinegar
2 tablespoons fresh orange juice
1/4 teaspoon salt
2 medium apples, chopped
3 stalks celery, sliced
3/4 cup dried cranberries
8 lettuce leaves, Bibb
3/4 cup brie cheese, cubed
1/2 cup walnuts, toasted and chopped

Steps:

  • In blender place vinaigrette ingredients. Cover and process 15 to 20 seconds until smooth. Pour in container, cover and refrigerate up to 2 days. Let stand at room temperature about 1 hour before serving.
  • In large bowl, stir together apples, celery and cranberries. Divide evenly among 8 lettuce lined salad plates.
  • Top each salad with cheese and walnuts. Sereve with cranberry vinaigrette.

Tips:

  • Using a variety of fresh, seasonal fruits and vegetables in your vinaigrette will give it a more complex and delicious flavor.
  • Be sure to taste your vinaigrette before serving and adjust the seasonings as needed.
  • If you're using a citrus fruit in your vinaigrette, be sure to zest the fruit before juicing it. This will add a burst of flavor to the dressing.
  • You can use a blender or a food processor to make your vinaigrette, but a whisk will also work just fine.
  • If you're making a vinaigrette ahead of time, be sure to store it in a covered container in the refrigerator. It will keep for up to 2 weeks.

Conclusion:

A well-made vinaigrette is a versatile dressing that can be used on a variety of salads, vegetables, and even grilled meats. It's a great way to add flavor and moisture to your food without adding a lot of calories or fat. So next time you're looking for a healthy and delicious dressing, give a vinaigrette a try!
