Time 1h25m

Number Of Ingredients 8

1 large butternut squash ( cut into 1 nich cubes)
2 large tart cooking apples cut into 1/2-inch thick slices
1/2 c fresh or frozen cranberries
1/2 c brown sugar
1/4 c (half a stick) butter
1 Tbsp flour
1 tsp salt
1/2 tsp ground nutmeg or mace

Steps:

  • 1. Preheat oven to 350°F. Slice and peel squash and apples
  • 2. Put squash cubes in ungreased 7x11-inch baking dish. Place apples on top and then cranberries. Mix the flour, salt, sugar, and nutmeg and sprinkle on top. Dot with butter. Bake 50-60 minutes.

Tips:

  • Choose the right squash: Look for a butternut squash that is firm and has a deep orange color. Avoid any squash that has bruises or blemishes.
  • Peel the squash carefully: Use a sharp knife to carefully peel the squash. Be sure to remove all of the skin, as it can be tough and bitter.
  • Cut the squash into even-sized pieces: This will help the squash cook evenly. Aim for pieces that are about 1-inch thick.
  • Roast the squash at a high temperature: This will help to caramelize the squash and bring out its natural sweetness. Roast the squash at 425 degrees Fahrenheit for about 20 minutes, or until it is tender and slightly browned.
  • Add the apples and cranberries: Once the squash is roasted, add the apples and cranberries to the pan. Toss to coat the fruit in the squash's juices.
  • Season the dish: Add some salt, pepper, and cinnamon to the pan. You can also add a pinch of nutmeg or ginger, if desired.
  • Bake the dish: Bake the squash, apples, and cranberries at 350 degrees Fahrenheit for about 20 minutes, or until the fruit is tender and the squash is heated through.
  • Serve immediately: This dish is best served warm. You can garnish it with fresh parsley or cilantro, if desired.

Conclusion:

This cranberry-apple-butternut squash dish is a delicious and healthy way to enjoy these fall flavors. The squash is roasted until tender and caramelized, and the apples and cranberries add a tart and sweet flavor. This dish is perfect for a weeknight dinner or a festive holiday meal.
