CRANBERRY-APPLE BUTTER BARS
I found this recipe in the Pillsbury Fall Baking Booklet that I found in the checkout aisle of the grocery store. The pictures in this booklet are absolutely amazing! One medium orange will provide enough grated pell and the 1/4 cup of juice called for in this recipe. Homemade or purchased apple butter will work in this recipe.

- Heat oven to 400 degrees. Spray 13 x 9-inch pan with cooking spray.
- In 4-quart saucepan, mix cranberries, granulated sugar, orange peel and orange juice. Heat to boiling over heat 6 to 8 minutes, stirring frequently, until cranberries pop and lose their round shape and mixture thickens. Stir in apple butter and 2 tablespoons butter; remove from heat.
- In large bowl, beat 3/4 cup butter and the brown sugar with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Stir in flour, salt, baking soda and oats. Press 3 cups oat mixture in pan.
- Spread cranberry filling over base. Crumble remaining 2 cups oat mixture over filling; press lightly.
- Bake 25 to 30 minutes or until golden brown. Cool completely, about 1 hour 30 minutes. For bars, cut into 8 rows by 4 rows.

CROCK POT CRANBERRY APPLE BUTTER
This is from the "Cranberry Festival Recipes" booklet I picked up at the cranberry festival in Bordentown NJ (where one of the Ocean Spray facilities is located) many years ago. It was submitted by a woman from Vincetown NJ and is one of my favorite apple butters. I usually use the cranapple juice.

- Core and chop apple; do not peel.
- Combine apples, cranberries and cranapple juice in a slow cooker.
- Cover and cook on high for five hours.
- Puree in sieve, food mill or processor.
- Return pureed mixture to crock pot and add sugar, cinnamon and cloves.
- Cover and cook on high for 1 to 2 hours.

- In a large cast-iron casserole, combine the apples and water.
- Cover and cook over moderate heat, stirring often, until soft, about 20 minutes.
- Uncover and cook on low heat, stirring occasionally, until it forms a thickened puree, about 45 minutes.
- Meanwhile, in a medium saucepan, cook the cranberries with sugar over low heat, stirring occasionally, until a thick puree forms, about 15 minutes.
- Pass cranberry puree through a coarse strainer.
- Then pass the apple puree through a coarse strainer and return it to casserole.
- Cook over moderately low heat, stirring occasionally until very thick, about 15 minutes.
- Add the honey and the cranberry puree and stir until blended.
- Transfer the butter to a heatproof bowl and cool completely.
- Pack into clean jars and refrigerate for up to 1 month.
