My grandmother used to make this, but she used saltines and straight cranberry. I've adapted it to fit our family's taste.

1 (14.5 ounce) can whole berry cranberry sauce
1 (14 ounce) can jellied cranberry sauce
½ (14.4 ounce) package graham crackers
8 ounces heavy whipping cream
2 teaspoons white sugar
½ teaspoon vanilla extract

Steps:

  • Chill a large metal bowl in the refrigerator or freezer, about 15 minutes.
  • Mix whole berry cranberry sauce and jellied cranberry sauce together in a bowl.
  • Place graham crackers in a large resealable plastic bag and crush with a rolling pin into crumbs.
  • Pour heavy cream into the chilled bowl and whip with an electric mixer on high speed until soft peaks form, about 2 minutes. Add sugar and vanilla extract; whip until medium peaks form, about 2 minutes more.
  • Place half of the graham cracker crumbs in the bottom of a trifle bowl. Top with half of the cranberry mixture and whipped cream. Repeat layers, ending with whipped cream. Chill until set, at least 3 hours.

2 cups confectioners' sugar

2 cans (16 ounces each) whole-berry cranberry sauce
2 tablespoons sugar
2 to 3 teaspoons grated orange zest
Fresh cranberries or mint, optional

Steps:

  • Prepare, bake and cool angel food cake according to package directions. Cut into 1-in. cubes; set aside. In a large bowl, combine cream cheese, confectioners' sugar, sour cream and vanilla; beat until smooth. Fold in whipped topping. In a bowl, combine the cranberry sauce, sugar and orange zest. , In individual parfait glasses or a 3-qt. trifle bowl, layer half of the cake cubes, cranberry mixture and whipped topping mixture. 3 tablespoons orange marmalade
3/4 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon sugar
1 (10-ounce) can whole cranberry sauce
2 tablespoons fresh orange juice
2 teaspoons orange zest
2 tablespoons chopped pecans, toasted

Steps:

  • Add the yogurt to a coffee filter or doubled paper towels lined in a fine sieve. Let drain over a bowl for at least 1 hour or up to overnight in the refrigerator. Discard the accumulated liquid on the bottom of the bowl. Add the drained yogurt to the bowl and stir in the marmalade. In a separate bowl, whip the cream with a beater until it begins to thicken. Add the vanilla and sugar and continue to whip until soft peaks just begin to form. Add the cranberry sauce to a medium bowl. Stir half of the cream into the cranberry sauce along with the orange juice and orange zest and mix gently. Add the other half of the cream to the bowl with the yogurt mixture. I found a recipe for lime parfaits online. This recipe has gotten me a lot of praise. I was racking my brain for a Thanksgiving dessert and tried several different ways to create a variation of the lime parfait. I tried pomegranate and cranberry juice first, both 100%. They were too wet. So, I had a light in my head go off and thought I should try cranberry sauce instead. It worked so well! I even added it to the real whipped cream I whipped up and it was delicious.

3 tablespoons unsalted butter
3 tablespoons sugar
½ cup graham cracker crumbs
1 (14 ounce) can low-fat sweetened condensed milk
½ cup cranberry sauce
1 cup cold whipping cream

1 1/4 cups plain yogurt
3 cups fresh cranberries or 3 cups frozen cranberries
3/4 cup sugar (sugar substitute ) or 3/4 cup Splenda granular (sugar substitute )
1/2 cup cold water, plus
2 tablespoons cold water, divided
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon unflavored gelatin
3 tablespoons half-and-half or 3 tablespoons light cream
2 cups cubed angel food cake
1/2 cup whipped topping

Steps:

  • Line a strainer with four layers of cheesecloth and put atop a clean bowl. Add yogurt and cover with corners of cheesecloth. Refrigerate 8 hours or overnight.
  • Combine cranberries, sugar and the 1/2 cup water in a large saucepan; cook over med heat 15 minutes until berries pop. Set aside 1/3 cup berries to use as garnish later on and refrigerate. Mash and strain remaining cranberry mixture, discarding pulp. Stir in spices and set aside.
  • Remove yogurt from cheesecloth and throw away the liquid which has collected in the bowl. Sprinkle the gelatin over the 2 tbsp water in a small saucepan. and let stand for 1 minute. Cook over low heat, (if mixture boils, gelatin will not set properly) stirring until gelatin is completely dissolved. Stir in the cream, cranberry pureé and yogurt.
  • Assembling the parfaits:
  • Put 2 tbsp gelatin mixture in each of the parfait glasses and top each with 1/4 cup cake cubes. Repeat these two layers and top with remaining gelatin mixture. You should have gelatin-cake-gelatin-cake-gelatin. Cover. Refrigerate for at least 4 hours, Garnish with whipped topping and reserved berries just before serving.
