Tips:

  • Choose the right cranberries: Use fresh, ripe cranberries for the best flavor and texture. Avoid cranberries that are bruised or soft.
  • Prep the pearl onions: Peel the pearl onions and cut them in half lengthwise. This will help them cook evenly.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the conserve from scorching.
  • Cook the conserve over low heat: Simmer the conserve over low heat for at least 1 hour, or until the cranberries have softened and the conserve has thickened.
  • Stir the conserve frequently: Stir the conserve frequently to prevent it from sticking to the bottom of the pot.
  • Use a sterilized jar: To store the conserve, use a sterilized jar with a tight-fitting lid.
  • Process the conserve in a water bath: If you want to store the conserve for more than a few weeks, process it in a boiling water bath for 10 minutes.
