- In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. - Add bacon to a skillet on medium heat and cook until chewy and crispy but pink and cooked through.
- Drain all but 1 tablespoon of bacon grease and add in onions, cooking on medium heat for 5-6 minutes until the onions are translucent.
