CRANBERRY ALMOND "RAINCOAST" CRISPS

Cranberry Almond

I got this recipe from the blog http://dinnerwithjulie.com/2009/01/27/rosemary-raisin-pecan-crisps/. They are a copy-cat of Raincoast Crisps, which I can no longer find in my town. Since I prefer the cranberry flavor, I changed the recipe a little, which I post here. These are fabulous with goat cheese or other savory cheese spreads, or on their own as a savory snack. (Raincoast Crisps is a trademarked name, made by Lesley Stowe foods.)

Place on racks; if still flexible, return to oven for another 10 minutes. Try not to eat them all at once.

Tips for Making Cranberry Almond Raincoast Crisps:

  • Use fresh cranberries: Fresh cranberries have a tart and tangy flavor that is perfect for this recipe. If you can't find fresh cranberries, frozen cranberries can also be used.
  • Toast the almonds: Toasting the almonds brings out their flavor and makes them more crunchy. This is a simple step that makes a big difference in the final flavor of the crisps.
  • Use a combination of flours: The recipe calls for a combination of all-purpose flour and almond flour. This combination gives the crisps a light and flaky texture.
  • Don't overmix the batter: Overmixing the batter will make the crisps tough. Mix the ingredients just until they are combined.
  • Bake the crisps until they are golden brown: The crisps should be baked until they are golden brown on top and the filling is bubbling. This usually takes about 30 minutes.

Conclusion:

Cranberry Almond Raincoast Crisps are a delicious and easy-to-make dessert that is perfect for any occasion. The combination of tart cranberries, crunchy almonds, and sweet crumble topping is sure to please everyone at your table. So next time you're looking for a special dessert to make, give Cranberry Almond Raincoast Crisps a try. You won't be disappointed!
