When I get into the kitchen making these good smelling breads it puts me in the Holiday Spirit. I enjoy taking some bread loaves to visit friends and gather around their table with a cup of coffee. This is an attractive bread. I like several different breads. To take a loaf when you visit really adds to the conversation.

2 cup(s) all purpose flour, sifted
1/2 teaspoon(s) salt
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1 cup(s) white sugar
1 medium orange, juiced and zested, save 1 tbsp juice for icing
2 tablespoon(s) butter, unsalted, melted
1 medium egg, beaten
1 cup(s) chopped walnuts
1 cup(s) cranberries, fresh, quartered
ICING
1 1/2 cup(s) powdered sugar
3 tablespoon(s) butter, unsalted
1 tablespoon(s) orange juice
1 tablespoon(s) whole milk + a little more if needed

Steps:

  • BREAD: Preheat oven to 350 degrees F. Grease and flour regular large loaf pan. *** When you put flour in pan shake it around to cover then take to sink and bump pan to remove excess flour.
  • In a large bowl combine flour, salt, baking powder, baking soda, and sugar. Make sure to mix up.
  • In a 1 or 2 cup measuring cup, put orange juice and zest (saving 1 Tbsp juice for icing), the butter, and...enough boiling water to make 3/4 cup !!! Stir this into flour mixture. FOLD in egg, walnuts,and cranberries. Pour batter into prepared pan.
  • Bake in preheated oven one hour or until a toothpick inserted into center of bread and comes out clean. Cool in pan 5 minutes before removing to a rack to cool completely.
  • ICING: Combine powdered sugar, butter, orange juice, and milk. Adding a LITTLE more milk might be necessary so icing is thin and slightly runny. Drizzle over bread. Allow icing to dry before slicing. When completely cooled to room temperature wrap in foil until ready to slice and serve.

1 (1/4 ounce) package active dry yeast
1/4 cup water (about 110 F)
1/2 cup warm milk
3 tablespoons sugar
1/4 cup butter, at room temperature
1 1/2 teaspoons salt
1/2 teaspoon ground cardamom
2 large eggs
1 teaspoon lemon, rind of, grated
3 1/2 cups all-purpose flour (approximately)
1/4 cup butter, at room temperature
1/4 cup all-purpose flour
2 tablespoons sugar
2/3 cup slivered almonds, chopped
1/2 cup dried cranberries (or cherries, or 1/4 cup each chopped red and green candied cherries)
1/2 teaspoon lemon, rind of, grated
1/4 teaspoon almond extract
2/3 cup powdered sugar
1 1/2 teaspoons lemon juice
1 tablespoon water

Steps:

  • 1.
  • Sprinkle yeast over warm water in a large bowl; stir briefly.
  • Let stand until foamy (about 5 minutes).
  • Stir in milk, sugar, butter, salt, cardamom, eggs, and lemon peel.
  • Using electric mixer (with a paddle attachment if you have one) or a heavy spoon, add 2 cups of the flour, 1 cup at a time, beating well after addition.
  • Then eat on medium speed for 3 minutes.
  • Add 1 1/4 cups more flour; beat until combined.
  • Scrape dough out onto a lightly floured board and knead until smooth (5 to 10 minutes) adding more flour as needed to prevent sticking.
  • Place in a greased bowl; turn over to grease top.
  • Cover with plastic wrap and let rise in a warm place until doubled (about 1 1/2 hours).
  • Meanwhile, prepare filling.
  • In a medium-size bowl, combine butter,flour and sugar.
  • Beat until smooth.
  • Stir in almonds, dried cranberries, lemon peep, and almond extract.
  • Cover and refrigerate.
  • Punch doubled dough down and knead briefly on a lightly floured board to release ari.
  • Roll into a 9- by 30-inch rectangle.
  • Crumble filling dough to within 1 inch of edges.
  • Beginning at long side, tightly roll up dough, pinching edge against loaf to seal.
  • With a sharp knife, cut roll in half lengthwise, carefully turn cut sides up.
  • Loosely twist ropes around each other, keeping cut side up.
  • Transfer to a greased and floured baking sheet and shape into a 10-inch ring, pinching ends together to seal.
  • Let rise, uncovered, in a warm place until puffy (45 to 60 minutes).
  • Bake in a 375°F oven until lightly browned (about 20 minutes).
  • Transfer to a rack and let cool briefly.
  • Meanwhile, prepare sugar glaze.
  • In a small bow, combine powdered sugar, lemon juice and 1 tablespoon water; stir until smooth.
  • Drizzle over warm bread.

2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice, freshly squeezed (if possible)
2 tablespoons melted butter
1 egg, well beaten
2 cups fresh cranberries, halved
1 cup chopped walnuts

Steps:

  • Sift flour, sugar, baking powder, salt and soda into large bowl and set aside.
  • Add 2 tablespoons melted butter to 3/4 cup freshly squeezed orange juice.
  • Add beaten egg to orange mixture and add to dry ingredients.
  • Mix until dry ingredients are moistened.
  • Stir in chopped nuts and cranberries.
  • Turn into (greased and floured) 9 x 5 x 3 inch loaf pan.
  • Bake at 350 degrees for 55 minutes to 1 hour.
  • Let stand 24 hours before slicing.
  • This recipe freezes very well - I usually wrap first in Saran Wrap, then wrap it in aluminum foil and then place in zip-lock bags - I generally take out of the freezer the night before serving, if possible.

I make this attractive bread to celebrate Santa Lucia Day on December 13. This Swedish custom is the symbolic start of Christmas in Scandinavia, a festival of lights that brightens the short, dark days of winter. I position seven birthday candle holders in my braided loaf before adding candles to prevent wax from melting on top of the bread.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1/3 cup warm 2% milk (110° to 115°)
1/4 cup sugar
1/4 cup butter, cubed
1 large egg
1 teaspoon grated orange zest
1/2 teaspoon salt
1/2 teaspoon orange extract
2-1/2 to 3 cups all-purpose flour
GLAZE:
1 large egg

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter, 1 egg, orange zest, salt, extract and 1 cup flour; beat until smooth.
