1 tablespoon packed light brown sugar
1 teaspoon fresh lemon juice
1/2 teaspoon ground cinnamon
24 wonton wrappers, half of a 12 oz package
1 1/2 tablespoons powdered sugar
3 cups light vanilla ice cream

Steps:

  • Preheat oven to 350ºF.
  • Coat a large baking sheet with cooking spray.
  • In a medium bowl, combine apples, brown sugar, lemon juice and cinnamon; toss to coat apples.
  • Place wonton wrappers on a flat surface. Drop apple mixture by teaspoonfuls onto center of each wrapper.
  • Moisten edges of wrapper with wet fingers, fold over one corner to make a triangle and press sides together to seal.

1 pint vanilla ice cream
1 canister whipped cream

1-1/4 teaspoons salt
1/2 teaspoon baking powder
8 tablespoons lard, cut into small cubes
8 tablespoons unsalted butter, cut into small cubes
1 large egg yolk
10 to 12 tablespoons ice water
FILLING:
5 cups thinly sliced peeled tart apples
3/4 cup plus 2 tablespoons apple juice, divided
3/4 cup sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
3 tablespoons cornstarch
2 cups fresh cranberries
EGG WASH:
1 large egg, lightly beaten
1 tablespoon 2% milk

Steps:

  • In a large bowl, combine all-purpose flour, cake flour, sugar, salt and baking powder; cover and freeze 30 minutes. Place lard and butter in a separate bowl; freeze 30 minutes. Place flour mixture in a food processor; pulse until blended. Add lard and butter; pulse until mixture is the size of peas., Transfer flour mixture to a large bowl.
