2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
1/4 cup milk
1/2 cup butter
2 teaspoons almond extract
1 1/2 cups fresh or frozen cranberries
1 tablespoon sugar
1/4 cup sliced almonds

Steps:

  • 1. Preheat oven to 375 F. 2. Butter an 8 ½ x 4 ½ x 2 ½ loaf pan and set aside. 3.Combine flour, sugar, baking powder, and salt in a medium mixing bowl. 4. Combine egg, milk, butter, and almond extract in a separate mixing bowl. 5. Add wet ingredients to dry ingredients, mixing just until moist. Stir in cranberries. 6. Spread batter in the buttered loaf pan. Sprinkle with sugar and almonds. 7. Bake for 45 minutes at 375 F. 8. Reduce heat to 350 F. Bake for an additional 30 minutes or until a toothpick inserted into the center comes out clean.

Oh yum! Tender and slightly sweet, we adored this quick bread recipe. It's tart from the cranberries, but a little sweet from the almond extract. The flavor of the almonds is subtle put pairs surprisingly well with the cranberries. Plus, it's so very simple to make. Make it in a large loaf or as mini loaves as Linda suggests....

2 c all-purpose flour
1 1/4 tsp baking powder
1/2 tsp salt
2 large eggs
1 c sour cream
3/4 c granulated sugar
1/2 c canola oil
1/2 tsp almond extract
1 c sliced almonds
1 c cranberries (fresh or frozen) chopped

Steps:

  • 1. Add all the ingredients (except the cranberries) to a large mixing bowl. Mix well.
  • 2. Fold in the cranberries.
  • 3. Pour batter into a sprayed 8.5"x4.5" loaf pan OR you can use 3 mini loaves (5-3/4"x3-1/4").
  • 4. Sprinkle top with 2-3 Tbsp sliced almonds.
  • 5. Bake 350* for approx 55 minutes until golden brown. (For mini loaves, bake approximately 40 minutes.)

Every year, The Dairy Farmers of Canada sponsor the printing and distribution of (what Canadians affectionately call) The Milk Calendar. Each page, starting with December of the previous year (in case you missed it), is a beautiful photograph, in colour, of a recipe for the month, and the applicable recipe neatly printed beside the photo. This year (2008), I started in December, because I love to bake "loaves" and this loaf is particularly appealing. Quoting directly, they say: "Moist, studded with fruit and nuts and made in one bowl - what more can you ask? A slice of this sweet loaf is perfect with a cup of tea or cafe latte..." Cooking Tip: *To sour Milk, spoon 2 tbsp (30 mL) lemon juice or white vinegar into measuring cup; pour in enough Milk to make 1 1/2 cups (375mL). Let it stand for 5 mins. then stir. For the Adventurous: replace half the cranberries with chopped dried apricots and use hazelnuts instead of almonds. Healthy Eating Tip: Don't deprive yourself of delicious baked goods over the holiday season. Forbidden foods will tantalize you all the more. Instead, choose modest-sized servings and savour the flavour. Allergy alert: If there is an aversion to nuts, simply eliminate the nuts and increase cranberries, or add raisins, or other chopped, dried fruit. You will like the combination. 1 cup dried cranberries
1/2 cup toasted almond, chopped

  • Butter a 9 x 5 inch loaf pan, or line with parchment paper.
  • In a large bowl, combine flour, sugar, baking powder, baking soda and salt.

My notes also say I added a 1/4 cup of chopped almonds to the batter and then used another 1/4 cup of sliced/slivered almonds for the topping. So I've adjusted the original to include this but feel free to leave the chopped almonds out of the batter itself. **Updated 12/7/11 - I've adjusted the bake time for this bread. The original times were definitely too long for this quick bread **

1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
3/4-1 cup 1% low-fat milk
