CRACKED SUGAR COOKIES

Cracked Sugar Cookies image

This is a family favorite sugar cookie recipe handed down to me from my mom. When my husband was deployed to Iraq, he was always excited to receive a box of these in the mail. I always make sure to watch these closely and take them out of the oven before they brown. If they brown, they will end up too hard and crunchy.

2 cups white sugar
½ cup butter, softened
½ cup vegetable oil
3 egg yolks
2 cups all-purpose flour

½ teaspoon vanilla extract
¼ cup white sugar, for rolling

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Beat 2 cups sugar, butter, and vegetable oil with an electric mixer in a large bowl until smooth. Tips:

  • Use cold butter: Cold butter is easier to work with and will help keep your cookies from spreading too much in the oven.
  • Cream the butter and sugar together until light and fluffy: This will help your cookies be light and airy.
  • Add the eggs one at a time: This will help prevent the cookies from becoming tough.
  • Don't overmix the dough: Overmixing the dough will make your cookies tough.
  • Chill the dough for at least 30 minutes before baking: This will help the cookies hold their shape in the oven.
  • Bake the cookies until the edges are just starting to brown: This will help prevent the cookies from becoming overcooked.
  • Let the cookies cool on a wire rack before frosting: This will help the frosting set properly.
