1 15 ounces can chili ( any brand/flavor)
2-3 cups cheddar cheese (shredded)

Steps:

  • Preheat oven to 350°F.
  • Stir together cream cheese and chili until combined (mixture will be chunky). Stir in 1 cup shredded cheddar cheese.
  • Spread mixture in the bottom of a 9-inch pie plate or similarly sized pan. Sprinkle with remaining shredded cheese.
  • Bake until hot and cheese is melted, 10-15 minutes. Serve with tortilla chips.

2 8 oz. cream cheese, softened
2 Tbsp worcestershire sauce
2 Tbsp lemon juice
2 tsp lemon zest, grated (optional)
1/4 c sour cream
1/2 c onion, finely chopped
1/4 tsp garlic powder
1/4 tsp celery salt
1/4 tsp ground ancho chili pepper
1/3 c horseradish
1 bottle chili sauce (drain excess liquid off with a mesh strainer)
8 - 12 oz fresh crab meat or imitation crab
GARNISH
1 - 2 medium green onions, chopped
fresh parsley or basil, chopped
hot sauce, drizzled on top

  • 1. Cream well the first 8 ingredients and spread on the bottom of a serving dish. Layer horseradish, chili sauce (drain off with a mesh strainer if you don't like it watery on sides), and then the crab meat shredded on top or lumpy either way. 1 Hatch green chile or 1 cup canned diced Hatch chiles
1 tablespoon canola oil
1/2 cup finely chopped scallions, white and light green parts only, plus 2 tablespoons sliced dark green parts, for garnish (4 to 5 scallions)
1 pound cream cheese, at room temperature
Kosher salt and freshly ground black pepper
1/2 cup sour cream
2 cups Mexican blend shredded cheese (8 ounces)
1 teaspoon lime zest (2 limes)
Blue and white tortilla chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the Hatch chiles on a burner over medium-low heat until the skins char and blister; this will happen very quickly. Remove to a bowl, cover with plastic wrap and set aside for 15 minutes to steam.
  • Heat a 10-inch cast-iron skillet over medium heat and add the canola oil, swirling the pan to coat. Add the scallions and cook until slightly softened, stirring, 1 to 2 minutes.
  • Meanwhile, peel and seed the chile and then it cut into medium dice. Turn the heat under the skillet to low and add the chiles, cream cheese and some salt and pepper. Cook, stirring often, until the cream cheese is melted. Add the sour cream, 1 1/2 cups of the shredded cheese, and the lime zest. Smooth the top and then sprinkle with the remaining 1/2 cup shredded cheese.
  • Bake until the cheese is melted and bubbly and just starting to brown, about 15 minutes.
  • Garnish with the dark green scallions and serve with tortilla chips.

1 tablespoon Worcestershire sauce
2 tablespoons mayonnaise
6 ounces Heinz Chili Sauce (about 1/2 jar)

2 medium shallots, quartered
1 lemongrass stalk, bottom third only, tough outer layers removed, cut into a few pieces
1 3-4" piece ginger, peeled, coarsely chopped
1 serrano chile, preferably starting to turn orange, halved, seeds removed if desired
4 medium garlic cloves
2 Tbsp. double-concentrated tomato paste
1 tsp. sugar
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
1 Tbsp. vegetable oil
4 oz. cream cheese, room temperature
2 Tbsp. mayonnaise
8 oz. claw crabmeat, picked over
3 medium scallions, finely chopped
½ large bunch cilantro, tough stems discarded, leaves and tender stems finely chopped
2 Tbsp. store-bought fried shallots or garlic (optional)
Shrimp chips (such as Dandy's or Shrimp Snacks) or Ritz crackers (for serving)

Steps:

  • Pulse or blend shallots, lemongrass, ginger, chile, garlic, tomato paste, sugar, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ cup water in a food processor or blender until a coarse purée forms.
  • Heat oil in a medium skillet over medium-high. Scrape purée into pan and cook, stirring often, until mixture darkens and thickens to the consistency of tomato paste, 12-15 minutes. If it begins to stick and brown, stir in a little water (about 1 Tbsp.), scraping up any browned bits with a wooden spoon. (You should have about ⅔ cup.)
  • Transfer mixture to a small bowl and vigorously mix in cream cheese and mayonnaise. Stir in crabmeat, half of the scallions, and half of the cilantro. Taste dip and season with more salt if needed.
  • Transfer dip to a serving bowl. Top with remaining scallions and cilantro, then with fried shallots (if using). Serve with shrimp chips.
