This recipe uses those fake crabmeat "sealegs" you find in the grocery store. I can hear the purists out there groaning already. Fake crab is actually made with real fish, but seasoned to taste like crab. My daughter has a particular fondness for sealegs, and this is one of my favorite ways of preparing it for her. I don't think fake crab tastes much like real crab at all and highly recommend you do give real crab a try sometime. But for those times when you don't have any real crab, why not give this a try? It doesn't matter if you use "flake style" or "chunks" or "legs" in this recipe.

1/2 cup Miracle Whip (regular or light) or 1/2 cup mayonnaise
2 stalks celery, finely chopped

  • Drop fake crab into a food processor (or one of those hand crank food processing bowls) and pulse just a few seconds- to break up the crab into small chunks (don't go overboard).
  • Add Miracle Whip and pulse (or hand crank) another couple of seconds until crab is minced and all is blended.
  • Stir in finely chopped celery and red onion (do this by hand or you will end up with mush).
  • Season to taste with salt and pepper, if desired.

1 pound jumbo lump crabmeat (about 2 cups)
1 cup mayonnaise
2 teaspoons Old Bay seasoning
2 teaspoons Dijon mustard
1/4 cup thinly sliced scallions
1/4 cup thinly sliced celery
12 thin slices pumpernickel bread (about 3 1/2 inches square and 1/8 inch thick)
8 tablespoons softened butter
1/4 cup thinly sliced red onion
4 hard-boiled eggs, thinly sliced
2-3 heads of crisp baby lettuce

Steps:

  • 1. In a medium-sized bowl combine the crab, mayonnaise, Old Bay seasoning, mustard, scallions, and celery. Mix gently until ingredients are evenly distributed and well coated with mayonnaise.
  • 2. Place four slices of bread on a clean surface and spread a half tablespoon of butter on each slice. Spread each slice with one sixth of the crab salad and top with thin layers of onion, egg, and baby lettuce.
  • 3. Butter both sides of four more slices of bread and top each half sandwich with one of these slices. Spread each sandwich with a third of the remaining deviled crab and the remaining onion, egg, and lettuce.
  • 4. Close the sandwiches with the four remaining bread slices, spread on oneside with the rest of the butter. Press firmly, butter side down, to "seal" the sandwich.
  • 5. Slice off crusts then slice each sandwich into four triangular finger sandwiches and place on a platter.

2 pounds frozen king crab legs (not thawed) or 1 pound fresh lump crab meat, picked over
2 tablespoons fresh lime juice, or to taste
1/2 cup mayonnaise
2 teaspoons Creole or other coarse-grained mustard
four 1-inch-thick slices brioche or challah
unsalted butter, softened, if desired
4 tablespoons freshly grated Parmesan
Accompaniment: lime wedges
Garnish: chopped fresh chives

  • Preheat broiler.
  • If using king crab legs, split them lengthwise and cut crosswise into 4-inch lengths. Arrange legs, shell sides down, on a steamer rack set over a kettle of simmering water and steam, covered, 7 to 10 minutes, or until heated through. Remove rack from heat and let crab stand, covered, until just cool enough to handle. Working over a bowl, with a fork extract crab meat from shells, discarding cartilage and allowing juices to accumulate in bowl. Using your fingers, separate crab meat into large shreds. (If using lump crab meat, put in a bowl but do not shred.) Add 1 tablespoon lime juice and toss to combine.

  • Lightly toast brioche or challah and with a 3 1/4-inch round cutter cut out rounds. Lightly butter toast. Spoon one fourth crab mixture into a 1/2-cup measure. Holding a toast round on top of mixture in measure, invert crab onto round and set on an ungreased baking sheet. Repeat procedure with remaining crab mixture and rounds and sprinkle 1 tablespoon Parmesan over each sandwich. Broil sandwiches about 3 inches from heat until cheese is melted and golden, 1 to 2 minutes.

1 large egg
2 tablespoons mayonnaise

1 tablespoon chopped fresh parsley
1/4 teaspoon finely grated lemon zest
1/4 teaspoon paprika
Pinch of cayenne pepper
1 pound lump crabmeat, picked over
1 1/4 cups oyster crackers
Vegetable oil, for frying
8 hamburger buns, split
Bibb lettuce, for serving
1/2 cup mayonnaise
1/2 teaspoon finely grated lemon zest, plus 2 tablespoons lemon juice

  • Cook the crab cakes: Heat 1/2 inch vegetable oil in a large nonstick skillet over medium-high heat until shimmering. Press the crab cakes into the ground oyster crackers, turning to coat. Working in batches, add the crab cakes to the skillet and fry, turning, until golden, 4 to 5 minutes. (Adjust the heat if the crab cakes are browning too quickly.) Drain on a paper towel-lined plate. I just love crab cakes, and I love BLTs. What could be better than combining them? Dungeness crab is native to the West coast, specifically from the Aleutian Islands in Alaska to Santa Cruz, California. I got this recipe from the About.com Gourmet Food blog.

5 -6 slices white bread
3/4 cup chopped fresh parsley
1 large egg yolk
2 teaspoons fresh lemon juice
2 teaspoons Worcestershire sauce
1 1/2 teaspoons Tabasco sauce
2 tablespoons Dijon mustard
1 teaspoon Dijon mustard
1/2 teaspoon paprika
1/2 teaspoon chopped dried thyme
1/2 teaspoon celery seed
1/4 teaspoon fresh ground black pepper
5 tablespoons olive oil
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1 lb dungeness crabmeat, picked over and drained
1 cup mayonnaise
2 tablespoons prepared horseradish
2 tablespoons fresh lemon juice
2 teaspoons grated lemon zest
1/8 teaspoon fresh ground black pepper
kosher salt
12 slices thick-cut Canadian bacon (a little more than 1 pound)
2 tablespoons olive oil (or more if needed)
12 slices sandwich bread
6 lettuce leaves

Steps:

  • To prepare the crab cakes, tear up the bread and pulse in a food processor to make fine, soft crumbs (you should have about 5 cups). Transfer the bread crumbs to a shallow pan and mix in 1/2 cup of the parsley.
  • In a food processor, combine the egg yolk, lemon juice, Worcestershire sauce, Tabasco sauce, mustard, paprika, thyme, celery seeds and black pepper.
  • Pulse to combine. With the motor running, add the oil through the feed tube in a slow, steady stream until the mixture emulsifies and forms a mayonnaise. Transfer the mayonnaise to a bowl.
  • In a large bowl, combine the onion and bell peppers with the remaining 1/4 cup parsley. Add the mayonnaise and crabmeat and mix lightly.
  • Using a rubber spatula, fold in 1 cup of the bread crumb mixture. Do not overwork the mixture or the crab cakes may get gummy.
  • Gently form 6 cakes and flatten them into patties about 1/2 inch thick. Dredge the patties lightly in the remaining bread crumb mixture.
  • Cover the crab cakes with plastic wrap and refrigerate for at least an hour. Or you can freeze them!
  • **To prepare the horseradish mayonnaise, combine all the ingredients in a small bowl and mix well. Taste and adjust the seasoning with salt as necessary. Cover and refrigerate.
  • Preheat oven to 400°F Put the bacon on a baking sheet, place it in the oven, and cook until crisp, 8 to 10 minutes. Remove the bacon from the pan and drain on paper towels.
  • Place 2 large, nonstick skillets over medium heat and add about 1 tablespoon of the olive oil to each pan. Add 3 crab cakes to each pan and slowly fry them for 4 to 5 minutes on each side, until they are golden brown and heated through.
  • Preheat the broiler. Place the bread on a baking sheet and toast under the broiler, turning until light golden brown on both sides.
  • Lightly spread each slice of bread with the horseradish mayo. Place 1 side of toast, mayo side up, on each plate. Top each with 1 crab cake, 2 pieces of bacon, a tomato slice, and lettuce leaves. Place a second slice of toast on top, mayo side down.

1/2 c mayonnaise (may substitute low-fat)
1/8 tsp garlic salt
1/8 tsp ground black pepper
16 oz imitation crab meat (may use real crab)
1 c (4 oz) shredded mozzarella cheese
2 Tbsp sweet red bell pepper, finely chopped
2 Tbsp green onion, finely chopped
1/4 c celery, finely chopped
1 loaf unsliced french bread, halved lengthwise*
1/2 to 1 c grated cheddar cheese, if desired

Steps:

  • 1. In a large bowl, combine the mayonnaise, garlic salt and pepper. Stir in the crab, cheese, red pepper onions and celery. Spread over bread halves* Sprinkle with cheddar cheese, if desired.
  • 2. Place bread halves on baking sheet. Broil 5 inches from heat for 7-8 minutes or until lightly browned. Cut into 3-inch pieces.
  • 3. MY NOTE: I used 6-inch submarine rolls instead of the loaf of French bread.

1 cup mayonnaise
1 cup parmesan cheese, freshly grated
1 lb fresh crabmeat
8 ounces sharp cheddar cheese, grated

Steps:

  • Pick through crab for shell.
  • Split muffins, place on a cookie sheet and toast lightly.
  • Drain and chop artichoke hearts.
  • Blend artichoke hearts with mayonnaise and Parmesan.
  • Spread on muffin halves and place cooked crab meat on top.
  • Sprinkle each with cheddar cheese.
  • Broil until cheese melts and serve.

2 cups canola oil
1/2 pound Maine or Dungeness crabmeat
3 tablespoons red onion, finely chopped
2 tablespoons scallions, thinly slices
1 1/2 tablespoon red bell pepper, finely diced
1/4 cup mayonnaise or aioli
1 tablespoon Tabasco
1 1/4 cup breadcrumbs, divided (preferably Panko)
2 Tbs cup lemon juice
1 1/2 tablespoon Worcestershire
1 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 beaten egg
2 mangos
2 cups water
1 teaspoon confectioner sugar

Steps:

  • In a 10 inch saute pan, heat 1 cup canola oil on high heat. Test readiness with a piece of bread. Turn heat to medium. Check temperature with thermometer - it should read 375 degrees F. In a medium mixing bowl, combine crab, onion, scallions, bell pepper, mayonnaise, Tabasco, 1/4 cup of the breadcrumbs, lemon juice and Worcestershire sauce. Mix until fully incorporated. Make 3 ounce cakes and dredge in the flour, then egg and the remaining breadcrumbs. Lay the cakes in the oil and pan-fry for 5 to 6 minutes. Remove and place on a paper towel and season with salt in a mixing bowl.
  • In a medium mixing bowl, combine all ingredients. Mix well and refrigerate until ready to use.
  • In a blender combine ingredients and mix until smooth. Refrigerate until ready to use.
  • To serve crab cakes, spoon puree onto the plate in a small pool. Slice the cake in half and lay the bottom portion in the puree. Spoon avocado salsa on top and place the top of the cake on the avocado like a sandwich. Top with a small amount of avocado and garnish with cilantro leaf.

  • Whisk mayonnaise and next 3 ingredients in medium bowl. Gently mix in crabmeat, shrimp, celery, and onion. Season filling with salt and pepper.
  • Arrange 4 bread slices on work surface. Spread 1/4 of filling on each slice (about 1/2 cup). Top filling with bread slice; press to adhere. Brush top bread slice of each sandwich with melted butter.
  • Place large griddle over 2 burners. Heat griddle over medium heat. Place sandwiches, buttered side down, on griddle. Cook until bottom is golden brown, 6 to 7 minutes. Brush top of each sandwich with melted butter. Using metal spatula, turn sandwiches over. Cook until bottom is golden, about 5 minutes.
  • Cut each sandwich into quarters. Transfer to platter. Sprinkle with parsley.
