ULTIMATE CRAB AND SPINACH MANICOTTI WITH PARMESAN CHEESE SAUCE
You can cheat and make this with imitation crabmeat but of course the real stuff is better, if you are using frozen crabmeat make certain to squeeze out any excess moisture before using for this recipe --- if you are a spinach lover then add in the full box of spinach if not just use half a box as the spinach tends be over powering, you can use 1 pound fresh spinach in place of frozen --- you can stuff the shells and refrigerate until ready to bake, and this is also great with a red sauce instead of the Parmesan cheese sauce :)

Steps:
- Preheat oven to 375 degrees F and set a large pot of water on the stovetop to boil.
- In a bowl, combine the ricotta, egg, Parmesan, parsley, and salt and pepper. Set this filling aside.
- Cook the manicotti in boiling water for minute. After they've cooked for one minute, remove the pot from the heat but do not drain the manicotti squares in a colander as the noodles often stick together. Instead, run cold water into the pot until you can fish the manicotti squares out safely with your fingers. Shake off the excess water as you remove each square. It is usually best to place the squares on a clean cloth to further blot them.
- Lay the squares flat on a cloth, placing the filling across the center of the dough, leaving a little room at the edges on each side. Turn up the edge nearest you so that it lies on top of the filling. Now turn the edge farthest from you towards you so that it lies on top of the first edge. You now have a cannoli-like tube. Spread 1 ladleful of the sauce onto the bottom of a 9 by 12-inch baking pan. Turn the manicotti over and place seam-side down in the baking pan on top of the sauce. Continue until the pan has a layer of manicotti. Spoon 2 more ladlefuls of sauce over the top and bake for 45 minutes. Remove from the oven and let sit 10 minutes before serving. Serve with additional sauce for individual servings.
- Everyone has his own variation of marinara sauce. Borgatti's is basic and can be used throughout this book whenever marinara is called for. The seasonings and herbs can be adjusted, to taste.
- In a medium saucepan over medium-low heat, heat the oil. Saute the garlic, salt, and pepper for 5 minutes or until the garlic is softened. Add the remaining ingredients, then raise the heat to medium-high, and bring to a simmer, stirring often. Simmer for 30 minutes. The sauce can be stored for up to 5 days in the refrigerator and several months in the freezer.

ITALIAN BLUE CRAB SAUCE
This is our Xmas Eve dinner every year. Also, my all time favorite pasta dish! This tradition started because Catholics did not eat meat on Christmas Eve and they sought out seafood based pasta dishes to serve instead. All ingredients are approximations since we never really measure anything. Alter to suit your family's tastes! THIS RECIPE SHOULD BE MADE ONE DAY AHEAD TO ALLOW THE CRAB FLAVORING TO PERMEATE THE MARINARA!

Steps:
- Using a large stockpot, cover the bottom of the pot with the EVOO.
- Once heated, saute the garlic, crushed red pepper, parsley and basil.
- Add in crushed tomatoes and tomato paste and simmer for 30 minutes.
- Add in the crab and simmer with the lid partially covered for several hours.
- Remove from heat and cool. Put back in refrigerator and allow to sit overnight.
- 1 hour before serving, take out and simmer again on the stove.
- Remove crabs to allow to cool. Serve sauce over spaghetti.
- Once the pasta course is complete, serve the whole crabs and pick out the meat. UNBELIEVABLE!
Tips:
- Choose Fresh Crab Meat: Use fresh crab meat for the best flavor. If using frozen crab meat, thaw it completely before using.
- Don't Overcook the Crab: Crab cooks quickly, so be careful not to overcook it. Overcooked crab will become tough and rubbery.
- Use a Variety of Cheeses: The combination of cream cheese, Parmesan cheese, and mozzarella cheese creates a rich and flavorful filling.
- Make the Sauce Ahead of Time: The tomato cream sauce can be made ahead of time and refrigerated for up to 3 days. This will save you time on the day you're making the manicotti.
- Serve with a Side of Roasted Vegetables: Roasted vegetables, such as broccoli, asparagus, or zucchini, make a delicious and healthy side dish for crab manicotti.
Conclusion:
Crab manicotti is a delicious and elegant dish that is perfect for a special occasion. The combination of crab, cheese, and tomato cream sauce is sure to please everyone at the table. With a little planning and effort, you can make this dish at home and impress your family and friends.
