1 pound fresh asparagus, trimmed
½ cup mayonnaise
1 tablespoon lemon juice
1 tablespoon ketchup
2 teaspoons sweet pickle relish
½ teaspoon Worcestershire sauce
¼ teaspoon chili powder
¼ teaspoon smoked paprika
1 pinch ground cayenne pepper, or to taste
salt and freshly ground black pepper to taste
1 pound cooked Dungeness crabmeat
1 head Bibb lettuce, torn into bite-size pieces
1 cup sliced English cucumber
1 cup thinly sliced celery
1 avocado, sliced
1 cup cherry tomatoes, halved
2 hard-boiled eggs, quartered
1 lemon, cut into wedges

Steps:

  • Bring a large pot of lightly salted water to a boil. Add asparagus and cook until tender, 2 to 3 minutes. Remove asparagus and and immediately immerse in ice water for several minutes to stop the cooking process. Pat dry.

1 pound of crab meat or small salad shrimp, cooked
about 8 cups of torn salad greens
2 -3 tomatoes, cut in wedges
2 -3 hard cooked eggs, cut in wedges
black olives, if desired
1 lemon
DRESSING
3/4 cup chili sauce (i like grandma's brand)
1/3 cup mayonaise
1/4 cup sour cream or greek yogurt
1 tablespoons finely grated onion
1/2 teaspoon sugar
fresh squeezed juice of 1/2 lemon (cut other 1/2 in wedges to serve with salad)
1/2 teaspoon worchestershire sauce
salt & pepper to taste

Steps:

  • 1. Hard cook eggs and chill. Make dressing by mixing all ingredients together and chilling in the fridge so flavors can marry. Prepare salad greens and chill until crisp. I use 1/2 romaine and 1/2 spring mix or spinach. Cut tomatoes in wedges.
  • 2. When all salad ingredients are well chilled, assemble salads in 4 shallow bowls or plates. Lettuce, shrimp or crab on top and tomato and egg wedges around sides. 1/2 cup diced red bell pepper

1/3 c mayonnaise, such as hellmann's®
1/3 c light sour cream
1 1/2 Tbsp chili sauce
1 Tbsp ketchup
1/4 tsp worcestershire sauce
2 tsp sweet relish
1/4 tsp hot paprika
SALAD
1/2 large head iceberg lettuce, finely chopped
1/4 large english cucumber, thinly sliced
14-16 large cherry tomatoes, halved
12 large shrimp or prawns, poached
1/2 lb crab meat
2 large free-run eggs, boiled, chilled, peeled and sliced
1 large ripe avocado, pitted, peeled and sliced
2 slice bacon, cooked and finely chopped
freshly ground black pepper, to taste (i always use mixed peppercorns)
2 large lemon wedges, for garnish
1 Tbsp fresh chopped parsley, for garnish

  • 1. In a small bowl, mix all the dressing ingredients together. Cover and transfer to the fridge until ready to serve.
