MADRAS CRAB CURRY
The sight of live crabs being sold in Chinatown brought back mouthwatering memories of mom's crab curry which I used to devour and I wanted to relive the experience. The body is cooked whole along with the pincers and legs. The legs usually don't have much meat but add flavor to the dish. The curry is purposely on the milder side to ensure that the spices do not overpower the delicate meat flavor. It is best when eaten the next day! Serve with hot rice cooked with a couple of cloves and piece of cinnamon.

THAI RED CURRY CRAB CAKES WITH A CHILI DIPPING SAUCE
Another recipe I made for my sisters birthday, very tasty crab cake recipe. I use fresh crab as I love the flavour of it, but canned is fine. It is also very easy to make, more time consuming if you have to crack crab, but you do taste the difference.

A quick, easy meal with lots of flavor. Was served this at a friend's house when we were a guest there. Feel free to increase the curry powder if you like it hotter. This is very mild curry. You can also substitute cooked shrimp, lobster, or real crab for the imitation crab meat. Serve over Saffron Rice.

Steps:
- Rub the crabs with 1 teaspoon of the turmeric and 1/2 teaspoon salt; let them marinate for 1 hour. Combine the mustard seed and hot water in a small bowl and let stand for 10 minutes. Use a mortar and pestle to grind the seeds into a coarse paste.
- Heat the oil in a wok or kadhai over medium heat. Add the crabs and stir fry until they change color, about 4 minutes. Remove the crabs from the oil and set aside.

Raise the heat to high, add the potatoes, and cook, stirring constantly, for about 2 minutes. Add the cloves, cinnamon stick, cardamom pods, and peppercorns, and stir for thirty seconds.
- Stir in the tomatoes, ginger paste, and garlic paste. Halve three of the chiles and add them to the wok. Cook and stir for an additional minute or two over high heat. Reduce the heat to medium; add the remaining 1 teaspoon turmeric, the cayenne pepper, and the mustard paste and stir to combine. Add the crabs to the wok and pour in just enough water to cover the vegetables. Bring the water to a boil and stir in the sugar and salt to taste.

It's a super easy crab dip, perfect as a last-minute appetizer served with your favorite crackers! My favorite are baked garlic and chive pita crackers.

CRAB CURRY
This Cantonese curry is very mild, colorful, fun and finger-lickin' good. Oh, and messy. Great opportunity to use those antique finger bowls (damp cloths in a basket will also do). If you want spicey-hot, tweek accordingly. For more guests simply multiply the recipe by the number of crab you plan to serve. It's limited only by the capacity of your wok. I like to serve it in a large bowl in the center of the table with a loaf of wonderful bread to sop up the sauce.

Tips:
- Choose fresh crab: Fresh crab will have a sweet and briny flavor, while frozen crab can be more bland. To ensure the best flavor, choose live crab or crab that has been cooked and refrigerated within 24 hours.
- Prepare the crab properly: Before cooking the crab, be sure to clean it thoroughly. This includes removing the gills, intestines, and any other unwanted parts. You can also remove the crab's claws and legs if you prefer.
- Use a flavorful curry paste: The curry paste is what will give your crab curry its unique flavor. Be sure to choose a paste that is made with fresh, high-quality ingredients. You can also adjust the amount of curry paste to your liking, depending on how spicy you want the curry to be.
- Add plenty of vegetables: Vegetables help to add bulk and flavor to crab curry. You can use any vegetables that you like, but some good options include tomatoes, onions, peppers, and potatoes. You can also add greens, such as spinach or kale, at the end of cooking.
- Simmer the curry gently: Crab curry is best when it is simmered gently over low heat. This allows the flavors to develop and meld together. Be careful not to overcook the crab, as it can become tough and chewy.
Conclusion:
Crab curry is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. By following these tips, you can make a crab curry that is full of flavor and sure to please everyone at the table.
