Steps:

½ cup milk
½ cup mayonnaise
1 teaspoon cornstarch
½ pound imitation crab meat, flaked
1 ½ cups shredded Swiss cheese
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together eggs, milk, mayonnaise and cornstarch. Mix in the imitation crab and Swiss cheese. Pour into pie shell.

1 cup shredded Swiss cheese, divided
1/2 cup chopped sweet red pepper

1-1/2 cups half-and-half cream

1/2 lb crabmeat
4 large eggs
2 cups heavy cream
2 tablespoons finely chopped fresh chives
2 tablespoons finely chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon freshly grated nutmeg
1/2 cup grated monterey jack cheese
1/2 cup grated swiss cheese
1 frozen pie crust

Steps:

  • Preheat oven to 375°F.
  • Whisk together eggs, cream, herbs, salt, pepper and nutmeg, then stir in cheeses and crabmeat.
  • Pour into crust and bake until filling puffs and is no longer wobbly in the center when quiche is gently shaken, 40-50 minutes.
  • Cool in pie plate on rack for 15 minutes.
  • *My quiche filling ran over a bit, so I suggest putting it on a sheet pan covered with foil to avoid dirtying your oven.

This recipe make 2, 8-inch pies, just divide all ingredients evenly between the two pie shells. If my memory serves me right, I believe the original recipe called for one large deep-dish, 10-inch pie plate, but I prefer to make it into two, 8-inch pies.

2 unbaked pie pastry (use 8 or 9-inch)
1/4 cup chopped celery (or to suit taste)
1/3 cup onion, chopped (or to suit taste)
1 (8 ounce) package cream cheese, softened
1/4 lb grated swiss cheese
1 lb uncooked shrimp, shelled, deveined
3 tablespoons butter, melted
5 large eggs, beaten
1 cup whole milk or 1 cup half-and-half

Steps:

  • Set oven to 425F degrees.
  • In a saute pan, melt the butter, and saute the onion and the celery, until soft.
  • Add in the shrimp, cook until the shrimp are pink in colour; set aside.
  • Divide the cream cheese in half, and cut the cream cheese into 1/4 inch pieces; sprinkle evenly into the bottom of the two pie crusts.
  • Top with the sauteed shrimp/onion mixture.
  • Top with the grated Swiss cheese.
  • Mix together the milk and eggs; divide evenly between the two pie crusts.

  • Reduce the temperature to 350F degrees, bake for 30 minutes more.

1 9 inch pie shell ( un baked)
1- 8oz pkg cream cheese, room temperature
4 eggs
1/2 c green onions-sliced
1/2 c light cream
1/2 tsp dill weed
1/2 tsp lemon pepper
1/2 tsp salt
1- 6oz can(s) crabmeat, drained and flaked
1 c shredded swiss cheese

Steps:

  • 1. Preheat oven to 350 degrees Place pastry shell in pie plate, flute edges
  • 2. Mix all remaining ingredients with mixer using only 1/4 of the swiss cheese on low speed until blended. Pour into pie shell and top with the remaining 3/4 cup of swiss cheese.
