Categories     Main Course

Time 55m

Number Of Ingredients 16

1 bunch Broccolini (cleaned and stripped of leaves)
4-5 cloves Garlic (thinly sliced)
2 tablespoons Extra-virgin olive oil ( to drizzle)
1-8- ounce Manicotti Pasta Shells (about 12)
2 cups Ricotta Cheese (Organic whole milk )
1 ½ cups Parmesan shreds (Organic)
1-8 ounce package Frozen spinach (thawed and drained)
½ cup parsley leaves (Chopped)
1 pound Raw shrimp (shells removed, cleaned)
8- ounces Lump crab meat (chopped)
¼ teaspoon Kosher salt (+more to season)
¼ teaspoon ground white pepper
1 pinch Red pepper flakes (or to own taste)
1 Egg white
4 cups red pasta sauce
parsley ( for garnish)

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the Manicotti pasta to the boiling water and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta.
  • Preheat the oven to 350 degrees F.
  • Thaw and drain the frozen organic spinach in a fine mesh colander, then drain excess water off the spinach by placing in a clean dish towel and wringing all water out.
  • Prepare the broccolini by cleaning and stripping the leaves from stalks.
  • Place the broccolini and thinly sliced garlic in the bottom of a baking dish, lightly drizzle with the extra-virgin olive oil, season with kosher salt, and ground black pepper. Give the broccolini a few turns to evenly coat with the olive oil, arrange the broccolini with the flowers to the outside walls of the dish, alternating right to left for a uniform appearance.
  • Clean one pound of shrimp by removing all the shells and mud vein. Finely chop the shrimp into small pieces.
  • In a large bowl, gently mix together the ricotta, ½ of a cup of Organic Parmesan shreds, thawed and drained of all water, frozen organic spinach, chopped parsley leaves, chopped crab, kosher salt, fresh ground pepper, the pinch of hot pepper flakes, and 1 egg yolk.
  • Gently and patiently fill the Manicotti with the shrimp and cheese mixture and place on top of the bed of broccolini. You can use a small spoon or a freezer bag that has the end cut off to pipe in the manicotti shells.
  • Top the filled manicotti with your favorite simple pasta Sauce, and top with the remaining Organic Parmesan shreds
  • Bake until bubbly and the top is golden brown, about 20 minutes.
  • Garnish with fresh parsley and serve immediately.

ULTIMATE CRAB AND SPINACH MANICOTTI WITH PARMESAN CHEESE SAUCE

Ultimate Crab and Spinach Manicotti With Parmesan Cheese Sauce image

You can cheat and make this with imitation crabmeat but of course the real stuff is better, if you are using frozen crabmeat make certain to squeeze out any excess moisture before using for this recipe --- if you are a spinach lover then add in the full box of spinach if not just use half a box as the spinach tends be over powering, you can use 1 pound fresh spinach in place of frozen --- you can stuff the shells and refrigerate until ready to bake, and this is also great with a red sauce instead of the Parmesan cheese sauce :)

MANICOTTI WITH MARINARA SAUCE

Manicotti with Marinara Sauce image

The simple ingredients and flavors of this dish make it palatable for the youngest Borgatti customers. You can buy pre-stuffed manicotti at the shop.

Provided by Food Network

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 14

1 pound ricotta
1 whole egg
1/4 cup grated Parmesan
2 tablespoons minced parsley leaves
Salt and pepper
Salt and pepper
Marinara Sauce, recipe follows
8 squares fresh manicotti noodles
1/3 cup olive oil
2 garlic cloves, thinly sliced
Salt and freshly ground pepper
2 (28-ounce) cans crushed plum tomatoes
10 basil leaves, chopped (or 1 tablespoon dried)
1 tablespoon chopped parsley leaves (or 1 teaspoon dried)

Steps:

  • Preheat oven to 375 degrees F and set a large pot of water on the stovetop to boil.
  • In a bowl, combine the ricotta, egg, Parmesan, parsley, and salt and pepper. Set this filling aside.
  • Cook the manicotti in boiling water for minute. After they've cooked for one minute, remove the pot from the heat but do not drain the manicotti squares in a colander as the noodles often stick together. Instead, run cold water into the pot until you can fish the manicotti squares out safely with your fingers. Shake off the excess water as you remove each square. It is usually best to place the squares on a clean cloth to further blot them.
  • Lay the squares flat on a cloth, placing the filling across the center of the dough, leaving a little room at the edges on each side. Turn up the edge nearest you so that it lies on top of the filling. Now turn the edge farthest from you towards you so that it lies on top of the first edge. You now have a cannoli-like tube. Spread 1 ladleful of the sauce onto the bottom of a 9 by 12-inch baking pan. Turn the manicotti over and place seam-side down in the baking pan on top of the sauce. Continue until the pan has a layer of manicotti. Spoon 2 more ladlefuls of sauce over the top and bake for 45 minutes. Remove from the oven and let sit 10 minutes before serving. Serve with additional sauce for individual servings.
  • Everyone has his own variation of marinara sauce. Borgatti's is basic and can be used throughout this book whenever marinara is called for. The seasonings and herbs can be adjusted, to taste.
  • In a medium saucepan over medium-low heat, heat the oil. Saute the garlic, salt, and pepper for 5 minutes or until the garlic is softened. Add the remaining ingredients, then raise the heat to medium-high, and bring to a simmer, stirring often. Simmer for 30 minutes. The sauce can be stored for up to 5 days in the refrigerator and several months in the freezer.

SEAFOOD STUFFED MANICOTTI

Seafood Stuffed Manicotti image

This has been at the top of our favorites since 1991. Slightly labor intensive to make, but well worth it. Very light - the fontina white sauce with nutmeg and dry vermouth, along with all the other ingredients, make this a delectable choice. Great for a private romantic dinner or if you're having dinner guests who like seafood. Using a food processor makes the fine chopping easy. Recipe originally came from Sunset's Casserole cookbook.

CRAB AND RICOTTA MANICOTTI

Crab and Ricotta Manicotti image

Categories     Sauce     Bake     Ricotta     Crab     Boil

Yield 6 servings

Number Of Ingredients 10

1 box manicotti pasta (about 12 shells) or an (8-ounce) box cannelloni
1 cup whole-milk ricotta cheese
3/4 cup grated Parmesan cheese, plus 1/4 cup for sprinkling
1 egg yolk
1/2 cup chopped fresh basil
1 pound lump crabmeat, picked over for shells and cartilage
1/4 teaspoon salt
1/4 teaspoon freshly ground white pepper
Butter for the pan
Béchamel sauce (page 225)

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain.
  • In a large bowl, mix together the ricotta, 3/4 cup of the Parmesan, the egg yolk, basil, crab, salt, and pepper.
  • Preheat the oven to 350°F. Butter a 9 x 13 x 2-inch glass baking dish.
  • Fill the manicotti with the crab mixture and place in the prepared baking dish. Top the filled manicotti with the béchamel sauce and sprinkle with the remaining 1/4 cup of Parmesan cheese. Bake until bubbly and the top is golden brown, 15 to 20 minutes. Serve immediately.

Tips:

  • Choose high-quality crab and shrimp. Freshness is key, so look for seafood that is firm and has a briny smell. Avoid any seafood that is slimy or has an off odor.
  • Don't overcook the seafood. Crab and shrimp cook quickly, so be careful not to overcook them, or they will become tough.
  • Use a variety of cheeses. This will give the manicotti a rich and complex flavor. Some good options include ricotta, Parmesan, and mozzarella.
  • Make sure the manicotti is cooked through. The pasta should be al dente, or slightly firm to the bite.
  • Serve the manicotti with a flavorful sauce. A simple marinara sauce or a creamy Alfredo sauce are both good options.

Conclusion:

Crab and shrimp manicotti is a delicious and elegant dish that is perfect for a special occasion. With its rich and creamy filling and crispy pasta shell, it is sure to impress your guests. So next time you are looking for a seafood dish that is both delicious and easy to make, give crab and shrimp manicotti a try.
