CORN AND BLACK BEAN SALSA AKA COWBOY SALSA

Corn and Black Bean Salsa Aka Cowboy Salsa image

This is a refreshing salsa that can be served as an appetizer with tortilla chips (lime flavored are really good), as a salad or over rice. Quick and easy, amounts are approximate. I have used canned diced tomatoes when fresh tomatoes are not as tasty.

BLACK-EYED PEA SALSA (COWBOY CAVIAR)

Black-Eyed Pea Salsa (Cowboy Caviar) image

A cross between Salsa and Cowboy Caviar made using caned fire roasted tomatoes as right now tomatoes are out of season and looked like yuk-o as well as being more than a little pricy. 30 minute stand time not showing in prep or cook time.

Time 10m

Yield 2 1/2 cups

Number Of Ingredients 9

15 ounces black-eyed peas, canned rinsed, drained
14 1/2 ounces diced fire-roasted tomatoes, well drained
1/4 onion, chopped
1/2 fresh jalapeno pepper, minced
1 tablespoon lime juice (or lemon juice)
1/2 teaspoon ground cumin
1 garlic clove, chopped
1 tablespoon cilantro
salt and black pepper

Steps:

  • Combine all ingredients. Let stand 20-30 minutes before serving.

Tips:

  • Utilize fresh ingredients: The fresher the ingredients, the more flavorful the salsa will be. If possible, use homegrown or locally sourced produce.
  • Choose ripe tomatoes: Ripe tomatoes are sweeter and have a better flavor than unripe ones.
  • Roast the tomatoes: Roasting the tomatoes intensifies their flavor and adds a smoky depth to the salsa.
  • Use a variety of peppers: Different types of peppers offer different levels of heat and flavor. For a milder salsa, use fewer jalapeƱos and serranos. For a spicier salsa, use more.
  • Don't overcook the peppers: Overcooked peppers can become bitter.
  • Add fresh herbs: Fresh herbs, such as cilantro and basil, add a brightness and complexity of flavor to the salsa.
  • Use fresh lime juice: Fresh lime juice adds a bright, acidic flavor that balances the heat of the peppers.
  • Season to taste: Taste the salsa and adjust the seasonings as needed. You may want to add more salt, pepper, or lime juice.

Conclusion:

Cowgirl salsa is a delicious and versatile condiment that can be used in a variety of dishes, from tacos and burritos to grilled chicken and fish. It is also a great way to use up leftover tomatoes and peppers. With its smoky, spicy, and tangy flavor, cowgirl salsa is sure to be a hit at your next party or gathering. So next time you're looking for a flavorful and easy-to-make salsa, give cowgirl salsa a try. You won't be disappointed!
