RIB EYE STEAKS WITH COWBOY BUTTER

Time 45m

Yield 4 servings

Number Of Ingredients 10

2 sticks salted butter, softened
1/3 cup finely minced fresh parsley, plus more if needed
1/4 teaspoon red pepper flakes
A pinch of coarsely ground black pepper, plus more if needed
1 clove garlic, finely minced
1 lemon, zested and halved
Salt, optional
Salt and freshly ground black pepper
4 rib eye steaks, 2 inches thick
2 tablespoons butter

Steps:

  • For the cowboy butter: Well in advance, make the cowboy butter. Place the softened butter in the bowl of a mixer fitted with a paddle attachment. Whip the butter until it's fluffy. Add the parsley, red pepper flakes, black pepper, garlic, lemon zest and the juice of half the lemon. Mix it until it's totally combined, scraping the sides as needed. Add more parsley, more lemon juice, more pepper or salt if you'd like.
  • Lay out a long piece of plastic wrap and scoop the butter mixture in a long strip down the middle of it. Carefully pull one side of the plastic wrap over the butter, squeezing it gently to form it into a log. Continue to roll the log of butter into a roll. When it's all rolled up, twist the ends (like a piece of candy) until they become very taut (this means the butter is pressing together inside the plastic to form a cohesive roll). Place the roll of butter into the fridge so it will harden, or into the freezer if you need to speed along the process.
  • For the steaks: Preheat the oven to 475 degrees F. Sprinkle salt and pepper on both sides of the steaks.
  • Melt the butter in a heavy ovenproof skillet over medium-high heat. When it's melted and golden brown, sear the steaks for about 45 seconds per side. Set in the oven to finish, about 3 minutes.
  • Lay a thick slice of cowboy butter on top of each steak so it will begin to melt. Serve within 5 minutes.

Time 26m

Yield 4 servings

Number Of Ingredients 6

1/2 cup freshly ground coffee
1/2 cup coarsely ground black pepper
1/4 cup kosher salt
1/4 cup brown sugar
4 (14 to 16 ounce) rib-eye steaks
2 tablespoons vegetable oil

Steps:

  • To prepare the coffee blend, combine all the ingredients in a jar with a tight-fitting lid. Shake well.
  • To prepare the steaks, preheat the oven to 450 degrees F. Season each steak with the coffee blend, evenly coating all sides and edges. Heat the oil in a large heavy skillet over high heat until just to the smoking point. Add as many steaks to the pan as will fit without overcrowding and sear well, 2 to 3 minutes per side. Transfer the steaks to a baking sheet and repeat with the remaining steaks. Place the steaks in the oven and cook for 5 to 10 minutes for medium-rare. Let stand for at least 5 minutes before serving. Or finish on the grill.

Time 15m

Number Of Ingredients 5

2 12 oz rib eye steaks
1 Tbsp smoked paprika
1 tsp each salt chili powder and garlic powder
1/2 tsp black pepper
1 Tbsp vegetable oil

Steps:

  • 1. Mix the smoked paprika, salt, chili powder, garlic powder, and pepper together. Pat the steaks dry and rub the spice mixture over both sides of the steaks. Let the steaks come to room temp.
  • 2. Place a 12 inch cast iron skillet in oven and turn oven on at 500 degrees. Once the oven gets up to 500 degrees remove the skillet and from the oven and place over high heat on stove. Place a oven mitt over the handle so you don't get burned. Turn off the oven.
  • 3. Place the oil in the skillet when it starts smoking add the steaks. Place another skillet on top of the steaks and let sear for three minutes. Flip the steaks and sear on the other side for three minutes. Flip again and place in the oven that is still hot. Let cook 3 to 5 minutes depending on desired doneness. Remove from oven and let rest for at least 10 minutes.

Tips:

  • Choose high-quality steaks: Look for rib-eye steaks that are at least 1 inch thick and have good marbling.
  • Season the steaks liberally: Use a combination of salt, pepper, and garlic powder to season the steaks. You can also add other spices, such as paprika, cumin, or chili powder, to taste.
  • Cook the steaks over high heat: Sear the steaks in a hot skillet or on a grill over high heat for 2-3 minutes per side. This will create a nice crust on the outside of the steaks while keeping the inside tender and juicy.
  • Let the steaks rest before serving: Once the steaks are cooked, let them rest for 5-10 minutes before serving. This will allow the juices to redistribute throughout the steaks, resulting in a more tender and flavorful steak.

Conclusion:

Cowboy rib-eye steaks are a delicious and easy-to-make meal that is perfect for a special occasion or a weeknight dinner. With tender, juicy meat and a flavorful crust, these steaks are sure to please everyone at the table. So next time you're looking for a great steak recipe, give cowboy rib-eye steaks a try.
