3 (11-ounce) cans sweet corn with diced peppers, drained (also called Fiesta corn)
1 (7-ounce) can chopped green chilies
1 (6-ounce) can chopped jalapeno peppers, drained
1/2 cup green onions, chopped
1 cup mayonnaise
1 cup sour cream
1 teaspoon pepper
1/2 teaspoon garlic powder
1 (16-ounce) package shredded sharp cheddar cheese
2 to 3 bags of Frito Scoops or other tortilla chips

Steps:

  • In a large bowl, mix all ingredients except for the chips. Cover and chill two hours to overnight. Serve with Frito scoops or your favorite tortilla chips.

3 pkg frozen sweet petite (small kernel) corn
2 pkg philly cream cheese softened
1 stick real butter
1 can(s) diced jalapenos
pinch garlic salt and pepper

Steps:

  • 1. Put one (1) stick of butter and the frozen corn in a microwave safe bowl cooking as directed on package. (Don't overcook) Toss to coat with butter. Add remaining ingredients. Fold until cream cheese is melted and all is nicely coated.
  • 2. Return to microwave for 2-3 minutes. Serve! Note: This recipe can be made in the crockpot. Just add all ingredients, fold to combine and turn crockpot on med/low for 1-2 hours depending your crockpot.
