CORN AND BLACK BEAN SALSA AKA COWBOY SALSA
This is a refreshing salsa that can be served as an appetizer with tortilla chips (lime flavored are really good), as a salad or over rice. Quick and easy, amounts are approximate. I have used canned diced tomatoes when fresh tomatoes are not as tasty.

- 2. Return to microwave for 2-3 minutes. Serve! Note: This recipe can be made in the crockpot. Just add all ingredients, fold to combine and turn crockpot on med/low for 1-2 hours depending your crockpot.
Tips:
- Choose fresh, sweet corn. Look for ears with tightly packed, plump kernels and bright green husks.
