1 whole garlic bulb
2 to 3 tablespoons olive oil, divided
2 dried ancho chilies
2 dried chipotle chilies
1 bottle (12 ounces) dark beer
3 pounds beef stew meat, cut into 3/4-inch pieces
2 large onions, chopped
3 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (8 ounces each) tomato sauce
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 teaspoon pepper
1/2 teaspoon salt
Optional: Shredded cheddar cheese and sliced jalapeno pepper, seeded

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb, but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Brush cut cloves with 1 teaspoon oil. Wrap in foil. Bake until cloves are soft, 30-35 minutes. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork., Meanwhile, in a large dry skillet over medium-high heat, toast chilies on both sides until puffy, 3-6 minutes. (Do not blacken.) Cool. Remove stems and seeds; coarsely chop chilies. Place in a small bowl; cover with beer. Let stand until softened, about 30 minutes., In the same skillet, heat 1 tablespoon oil over medium-high heat. 8 pounds beef chuck roast
2 (10 ounce) cans diced tomatoes with green chile peppers
1 large yellow onion, diced
2 tablespoons garlic powder
2 tablespoons ground cumin
2 (1.25 ounce) packages chili seasoning mix
3 cups dried pinto beans

Steps:

  • In a large stock pot over high heat, brown roast on all sides. Reduce heat to medium low and add the diced tomatoes with green chile peppers, yellow onion, garlic powder, ground cumin and chili seasoning mix. Cover and simmer until meat comes apart easily, about 3 to 4 hours.
  • Meanwhile, rinse the pinto beans and soak them in a bowl of warm water.
  • Remove cooked roast from the pot and set aside. Rinse the pinto beans and pour them into the pot. Pour in enough water to cover the beans and bring to a boil. Cover and simmer until the beans are very tender, about 1 1/2 hours, adding extra water as needed.
  • Shred roast with fork and discard the fat. Add the shredded meat to the cooked beans and pour in enough water to cover. Cover and simmer for 30 minutes

When I make this recipe, I like it to be so hot it's barely edible, so I put in about a dozen serano peppers. If you want it milder you can just add one or two jalapenos or omit them entirely. I also put canned jalapenos in mine which I don't think are very spicy but they do add a nice peppery flavor. I like to serve this chili in sour dough bread bowls. Note: When I do anything in the slow-cooker, I always wait and add the onions a couple of hours before the end. When you leave onions in a slow-cooker too long they get an upleasant taste which taints the whole dish. This is just a preference of mine; if they don't bother you you can put them in with the rest of the ingredients.

2 green bell peppers seeded and diced
2 anahiem peppers seeded and diced
1 head garlic minced

2 medium (or large) steaks (grilled and chilled, cut up small )
3 c water (or tomato juice)
3 large onions (chopped)
6 - 8 large tomatoes (cut up)
2 large (or 1 huge) zucchini (chopped)
1 large red bell pepper (chopped)
1 large green bell pepper (chopped)
4 clove garlic (minced)
1 bunch cilantro, fresh (chopped)
1 can(s) (15-16 ounces) whole kernel corn
2 Tbsp basil, dried
1 Tbsp ground cumin
1 tsp salt (optional)
1 tsp ground black pepper
2 tsp garlic powder (do not use garlic salt!)
1/4 tsp ground cayenne pepper
2 can(s) (large) favorite cheap spaghetti sauce
2 can(s) black beans
2 can(s) kidney beans
3 can(s) chili beans (already seasoned)
OPTIONAL INGREDIENT
1 large can tomato paste (for a thicker chili)

Steps:

  • 1. Cut up the chilled steak into very small pieces. Place in large kettle with the water (or tomato juice). Bring to a boil. Simmer for about 10 minutes while chopping veggies up.
  • 2. Chop up the onion, tomato, peppers and zucchini. Add to the kettle with the steak (you can add more water or juice if desired). Bring to a full boil. Reduce heat and simmer until all the veggies are cooked (about 15 minutes).
  • 3. Chopped Zucchini can be chopped large or small.
  • 4. Add the pasta sauce.
  • 5. Add canned beans and corn.
  • 6. Add the spices. Simmer for 10 minutes

1 lrg Sweet Onion, diced
4 cloves Garlic, crushed
1 -2 Habaneros, finely diced
1 c (237ml) BBQ Sauce
2 t (10g) Cayenne Pepper
2 t (10g) Chili Powder
2 t (10g) ground Cumin
2 T (30g) Paprika
2 T (30g) Brown Sugar
1 t (5g) fresh cracked Black Pepper
1/4 c (30g) Masa (corn flour), addition inspired by Pioneer Woman's Chili Recipe
1 12 oz Beer

Steps:

  • 1. Heat a large sauce pan (preferably cast iron) over med-high heat. Add ground beef and bacon and cook until it is nearly cooked through and browned, stirring occasionally. Next add onion, garlic and habaneros and cook for another 2-3 minutes or until onions start to soften. 2. Add BBQ sauce, spices, brown sugar, fresh cracked pepper, masa and beer. Stir to combine, bring to a simmer, then lower heat to keep at a gentle simmer. 1 medium onion (chopped)
1 green bell pepper (chopped)
1 poblano pepper (chopped)
2 stalks celery (chopped)

1 (14 1/2 ounce) can tomato sauce
1 (4 ounce) can tomato paste
1 (28 ounce) can diced tomatoes
1 tablespoon chili powder
1 tablespoon hot Mexican chili powder (McCormick makes it)
1 tablespoon cumin powder
1 tablespoon kosher salt
2 teaspoons black pepper

  • Cook the ground beef and drain. Slice the bacon into smaller pieces. To the ground beef add, bacon (uncooked), butter beans, baked beans, kidney beans, brown sugar, ketchup, and bbq sauce.
