Time 30m

Yield 24 crisps

Number Of Ingredients 4

3 jalapenos, sliced into thin rounds
3/4 cup freshly grated Parmesan cheese
3/4 cup freshly grated pecorino cheese
3/4 cup freshly grated manchego cheese

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper.
  • Sprinkle the jalapeno slices around one of the prepared baking sheets in a single layer. Bake for 7 to 9 minutes; this will remove some of the moisture from the jalapeno and help ensure your cheese crisps live up to the crisp in their name. Transfer to a bowl.
  • Meanwhile, mix the cheeses together in a medium bowl.
  • Using a tablespoon measure, spoon mounds of the cheese mixture onto the lined baking sheets, 1 to 1 1/2 inches apart from each other. Press a jalapeno slice into the center of each mound. Bake until golden and crisp, 10 to 12 minutes.
  • Allow the crisps to cool slightly before handling, then serve. Or let cool completely and store in an airtight container.

COWBOY COOKIES

Cowboy Cookies image

This recipe came to The Times in 2000 during the Bush-Gore presidential campaign when Family Circle magazine ran cookie recipes from each of the candidates' wives and asked readers to vote. Laura Bush's cowboy cookies, a classic chocolate chip cookie that's been beefed up with oats, pecans, coconut and cinnamon, beat Tipper Gore's ginger snaps by a mile. Here is an adaptation of that winning recipe.

Time 35m

Yield 3 to 3 1/2 dozen cookies

Number Of Ingredients 14

3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon ground cinnamon
1 teaspoon salt
1 1/2 cups (3 sticks) butter, at room temperature
1 1/2 cups granulated sugar
1 1/2 cups packed light-brown sugar
3 eggs
1 tablespoon vanilla
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups unsweetened flake coconut
2 cups chopped pecans (8 ounces)

Steps:

  • Heat oven to 350 degrees.
  • Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
  • In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, and combine thoroughly.
  • Add eggs one at a time, beating after each. Beat in vanilla.
  • Stir in flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.
  • For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
  • Bake for 15 to 17 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.

Tips:

  • Choose the right cheese: A good melting cheese, such as cheddar, Monterey Jack, or pepper Jack, is essential for this recipe. You can also use a combination of cheeses to create a unique flavor.
  • Use fresh, high-quality ingredients: The fresher the ingredients, the better the cowboy cheese bites will taste. Grating your own cheese instead of using pre-shredded cheese will also make a big difference in the flavor.
  • Don't overcook the cheese bites: Cook them just until the cheese is melted and gooey. Overcooked cheese bites will be tough and chewy.
  • Serve the cheese bites immediately: They are best enjoyed fresh out of the oven.

Conclusion:

Cowboy cheese bites are a quick and easy appetizer that is perfect for any occasion. They are cheesy, gooey, and packed with flavor. With just a few simple ingredients, you can make these delicious treats that everyone will love. So next time you are looking for a party appetizer, give cowboy cheese bites a try.
