HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

EASY COWBOY BEANS (FRIJOLES CHARROS)
This is a tasty, zesty side dish that can easily become a main meal. Serve soupy with warm flour tortillas or crusty bread, crumble corn bread on top, or scoop up with tortilla chips. Like mac and cheese, it's a great comfort food. It is easy to make because it doesn't require constant attention and is good for everything from a family meal to a football party. It can easily be doubled. Check flavor before serving and alter seasonings to taste if necessary. Top with more onion and cilantro as desired. If there are any leftovers, they hold up well and taste great the next day.

Number Of Ingredients 12
Steps:
- Instructions Pour beans into a colander and rinse. Look over beans and make sure they are clean and free of any stones or dirt that might have made its way into the bag. Place beans and approximately 2 quarts (8 cups) of water into a large pot and bring to a boil over high heat. Once boiling, carefully transfer the beans and water into a slow-cooker. Add oil, onion, and season with about 1/2 tablespoon of salt. Cook for at least 6 hours on high, although you can leave for a few hours more. I've also had success cooking them on low for 10-12 hours if that works better for you. When beans in the slow cooker are ready, cook the bacon in a large pot over medium/medium-low heat until crisp, stirring to avoid burning. Once bacon is crispy, remove some of the bacon grease, leaving only about 1 tablespoon in the pot. Don't throw away that liquid gold! Store in refrigerator for future use. Add the garlic and cook for about 1 minute, stirring constantly. Add the can of fire-roasted tomatoes and a pinch of salt, and with a wooden spoon, scrape up any browned bits that are stuck to the bottom of the pan from cooking the bacon. Let mixture cook for about 3-4 minutes, stirring occasionally. Stir in the beans with a slotted spoon, and then add enough of its cooking liquid to cover the entire mixture. Add the pickled jalapeño (1/2 cup will definitely give you a nice kick, so use less or more according to your spiciness threshold) and simmer on medium-low for about 20-30 minutes. Taste and season.

COWBOY BEANS - TEXAS STYLE
SOURCE : Derrick Riches, Your Guide to Barbecues & Grilling, About.com In Texas, beans mean pinto beans. These beans are cooked up with brisket burnt ends and barbecue sauce to make them the perfect side dish for barbecue brisket. If you don't have burnt ends try a grilled steak cooked well. You will want smoky flavor for these barbecue beans.

Steps:
- In a large saucepan, bring the soaked beans, ham hock, bay leaf, garlic, jalapeno, and 5 cups of water to a boil over high heat. Cover the pan, reduce the heat to medium and simmer for 2 hours or until beans are tender. If the beans absorb too much water, add 1 cup of water after 1 hour and continue cooking (Beans mixture should remain soupy while cooking). Turn off the heat.
- Cook the bacon in a large saute pan over medium-high heat until almost crisp, about 10 minutes. Add onion and cook for about 3 minutes or until translucent. Transfer bacon and onion mixture to the pot with the beans. Wipe pan clean. In same pan cook chorizo over medium heat until crisp, about 1 minutes. Using a slotted spoon, remove the chorizo and drain on paper towels. Add to the beans. Season lightly with salt, if necessary. Stir the beans over medium-high heat until heated through. Remove the bay leaf and ham hock and discard. Ladle into bowls and serve.
- Cook's Note: In place of soaking the beans, you can use 3 (15-ounce) cans rinsed and drained pinto beans. Proceed as above but reduce the cooking time to 1 hour.
DOLLYWOOD COWBOY BEANS.
This is a great recipe for Cowboy Beans fixed in the slow cooker; and it is so EASY. It is from the "Fix-It and Forget-it Recipes for Entertaining". I have listed the ingredients for a single recipe, but I always double it because it is so popular where ever I take it. Also, I have used ground turkey instead of the beef with excellent results. It wasn't posted here yet so I will do it to be sure I won't lose this great recipe! Enjoy!

Steps:
- Soak the beans overnight in lots of cold water. (Most recently, I have been using the Cook's Illustrated recommended method, soaking the beans in 4 qts water mixed with 3 tbl. table salt). Drain off the soaking water and rinse.
- Put beans in a very large pot. Pour in the beer and enough fresh water to come up 2 inches over the beans. Add remaining ingredients except salt. Cover, heat to a boil, reduce heat to very low - just enough to bubble the liquid a little. Simmer until beans are tender, 2 to 3 hours.
- If using ham hocks, remove, discard bones, chop and return to pot. Add salt to taste.
- Note1: I've noted the comment regarding the time - I made this again, and it took me just under two hours to get to tender beans. It is important to soak the beans well, and older beans may take longer. The beans should be tender but whole - they should not start breaking down.

Tips:
- Use a large pot or Dutch oven to make sure there is enough space for the beans and other ingredients to cook evenly.
- Soak the beans overnight or for at least 8 hours before cooking to reduce cooking time. If you don't have time to soak the beans, you can also use canned beans, but be sure to rinse them well before adding them to the pot.
- Add flavor to the beans by using a variety of seasonings, such as bacon, onion, garlic, chili powder, cumin, and paprika. You can also add other ingredients like diced tomatoes, corn, or bell peppers.
- Cook the beans over low heat for a long period of time to allow the flavors to develop. The beans should be cooked until they are tender but still hold their shape.
- Serve the beans with a variety of sides, such as cornbread, mashed potatoes, or rice.
Conclusion:
Cowboy beans are a delicious and hearty dish that is perfect for a casual meal. They are easy to make and can be tailored to your own taste preferences. Whether you like your beans spicy or mild, vegetarian or with meat, there is a cowboy bean recipe out there for everyone. So next time you are looking for a simple and satisfying meal, give cowboy beans a try.
