1 stick butter or margarine

2 Tablespoons 100% cocoa
1/2 cup carnation evaporated milk
1 tsp. vanilla
3 cups quick cooking oats (uncooked)

Steps:

  • Mix sugar, milk, and butter in saucepan. Bring to a rolling boil and then boil for 1 minute. Remove from heat and stir in peanut butter and vanilla. Fold in cocoa and rolled oats.
  • Drop from tablespoon onto waxed paper and let cool. No baking necessary.

20 ounces melting chocolate, such as almond bark
1 cup raisins, dried cranberries or dried cherries
1/2 cup slivered almonds
1/2 cup whole peanuts

Steps:

  • Line two baking sheets with parchment paper.
  • Melt the chocolate in a microwave or in a bowl set over a pan of boiling water. Pour in the raisins, almonds and peanuts and stir to combine.
  • Use a spoon or small cookie scoop to place mounds of the mixture onto the prepared baking sheets. Leave to sit at room temperature or in the fridge for 5 minutes to set. Package in gift sacks!

2 1/4 c ap flour
1/2 c cocoa powder unsweetened
1 tsp baking powder
1/4 tsp salt
1 c softened butter
1 1/2 c sugar
1 tsp vanilla extract
1 egg
1-12` oz milk chocolate chips or semi sweet
1-12 oz vanilla or white chocolate chips* optional
1 c broken nuts, ... pecans or walnuts. possibly macadamia
confectioners' sugar
pretty paper doily

Steps:

  • 1. Mix flour, cocoa, baking soda, and salt; set aside
  • 2. Cream butter well. Gradually beat in sugar until mixture is light and fluffy. Beat in egg and vanilla until well blended.
  • 3. Stir in chocolate and nuts, gradually stir in flour mixture until well-blended, chill dough for 30 minutes or until firm enough to handle.
  • 4. Shape into 18 balls using about ¼ cup dough for each. Place 4 inches apart on lightly greased cookie sheet; flatten to 3 & ½ inch diameter. Bake on middle rack in preheated 350º oven15 minutes or until medium firm to touch. Cool on sheet until firm; Remove to racks to cool completely.
  • 5. To decorate, place a lacy doily on cookie; dust with confectioners sugar stirred through a strainer; remove doily. Store cookies lightly covered with waxed paper between layers. Makes 18. it is a very stiff dough

3 Tbsp cocoa
1/2 c milk
1 stick butter or margarine
dash(es) salt
3 1/2 c quick cooking oatmeal
1/2 c peanut butter, crunchy or plain
1 tsp vanilla flavoring

  • 1. Mix first 5 ingredients in 3 qt sauce pan. Stir until well blended. On Medium heat, heat to a rolling boil. Boil for 3 minutes.
  • 2. Remove from heat and add oatmeal, peanut butter and vanilla. Stir until peanut butter is melted and all ingredients are well blended.
  • 3. Drop by spoonfuls onto wax paper. When set, Enjoy!
