2 tablespoon(s) honey (for chicekn)
2 tablespoon(s) soy sauce (for chicken)
2 clove(s) garlic, finely chopped (for chicken)
1 pound(s) boneless skinless chicken breast halves, cut into 1 1/2 inch pieces.
FOR COUSCOUS
1 cup(s) chicken broth
1/2 cup(s) 100% orange juice
1 - scallion finely chopped
1 tablespoon(s) olive oil
1/2 tablespoon(s) salt
1 cup(s) uncooked couscous
1/4 cup(s) golden or dark seedless raisins

Steps:

  • In a large bowl, combine the orange juice, joney, soy sauce, and garlic. Stir in the chivken until well-mixed. Marinate at room temperature for 20 to 30 minutes in the refrigerator for up to 2 hours. If using wooden skewers, soak them for 30 minutes before cooking.
  • Prepare the couscous. In a medium sacepan, combine the chicken broth, orange juice, scallion, oil, and salt.
  • Heat the broth mixture to a boil over medium heat. Stir in the couscous and raisins. Cover the pan, remove the pan from the heat and set aside for at least 5 minures.
  • Meanwhile, preheat the broiler. Thread the chicken onto 4 large or 8 small skewers. Broil for 2 minutes. Turn skewers, baste with remaining marinade, and broil 2 minutes longer or until chicken is opaque in center.
  • Spoon the couscous onto serving platter and top with skewered chicken. Remove chicken from skewers before serving.

Tips:

  • Use fresh ingredients. The fresher the ingredients, the better the couscous will taste. If you can, use fresh vegetables, fruits, and herbs.
  • Toast the couscous before cooking. This will help to give it a nutty flavor and make it less likely to clump together. To toast the couscous, simply heat a little olive oil in a pan over medium heat and add the couscous. Cook, stirring constantly, until the couscous is golden brown.
  • Use a flavorful broth. The broth you use to cook the couscous will add a lot of flavor to the dish. Use a broth that you like the taste of, such as chicken broth, vegetable broth, or beef broth. You can also use a combination of different broths.
  • Add some vegetables. Vegetables are a great way to add flavor, color, and nutrients to couscous. Some good vegetables to add to couscous include carrots, celery, onions, peppers, and tomatoes.
  • Add some fruit. Fruit can also be a great addition to couscous. Some good fruits to add to couscous include raisins, cranberries, apricots, and peaches.
  • Add some nuts or seeds. Nuts and seeds can add a nice crunch and flavor to couscous. Some good nuts and seeds to add to couscous include almonds, walnuts, pecans, pine nuts, and sunflower seeds.
  • Add some spices. Spices can help to add depth of flavor to couscous. Some good spices to add to couscous include cumin, coriander, paprika, and turmeric.
  • Serve warm or cold. Couscous can be served warm or cold. If you are serving it warm, you can fluff it up with a fork before serving. If you are serving it cold, you can let it cool completely before serving.

Conclusion:

Couscous is a versatile dish that can be enjoyed in many different ways. It is a good source of carbohydrates, protein, and fiber. It is also a good way to get your daily dose of fruits, vegetables, and nuts. Couscous is a delicious and healthy dish that can be enjoyed by people of all ages.
