OUR FAVORITE LEMON HERB COUSCOUS SALAD
We love this light couscous salad - it doubles as a side, can be the main event or works well topped with grilled chicken or Adam's favorite, shrimp! With lots of texture from crisp cucumber, sweet tomatoes, crunchy nuts and raisins, this is certainly one of our favorites. You can even make it ahead of time. See the notes section below for our tips.

Steps:
- Heat some oil in a roasting tray and then add the onions and fry for about 5 mins until just softened. While you're frying, add the saffron strands to the stock if using, so the flavour and colour infuses. (If you are making the Fragrant chicken too (see 'Goes well with') use the same pan to add flavour to this dish and leave the juices in there, but you can tip out some of the chicken fat if you like).
- Tip the chilli into the tray, fry for 1 min more, then take off the heat. Add the couscous and stock, then cover with cling film for 10 mins. Once the couscous has absorbed all the stock, quickly chop the coriander (if you chop it too soon it will start to wilt), then fork it through the couscous with the almonds, dates and lemon juice and serve straight away. To serve cold, leave to cool, then add the chopped coriander just before eating.

Tips:
- Choose high-quality couscous: Look for couscous made with whole wheat or semolina flour, as it has a nutty flavor and holds its shape better than white couscous.
- Toast the almonds: Toasting the almonds in a skillet or oven enhances their flavor and gives them a crispy texture.
- Use fresh lemon: Fresh lemon zest and juice add a bright, citrusy flavor to the dish. If you don't have fresh lemons, you can use bottled lemon juice, but the flavor will be less vibrant.
- Adjust the sweetness: The amount of honey in the recipe can be adjusted to your taste. If you prefer a sweeter dish, add more honey. For a more savory dish, reduce the amount of honey.
- Add herbs and spices: To add more flavor to the dish, try adding herbs such as parsley, cilantro, or mint. You can also add spices such as cumin, coriander, or paprika.
Conclusion:
This couscous with honeyed almonds and lemon is a delicious and versatile dish that can be served as a main course or side dish. It's packed with flavor and texture, and it's a great way to enjoy the fresh flavors of lemon and almonds. Whether you're looking for a quick and easy weeknight meal or a dish to impress your guests, this recipe is sure to please.
