Steps:
- In a large skillet or saucepan, heat oil on medium heat. Add sliced onions and cook, stirring often, until they are transparent and begin to brown.
- Stir in the sliced almonds and continue to cook for a few minutes. The almonds will toast and start to brown as well.
- Add the couscous cranberries. This will toast the couscous which add to the flavour and prevents it from being clumpy in when done. Stir almost constantly for a few minutes so that the couscous grains do not burn on the bottom of the pan.
- Add the broth/water and lemon zest. Since the couscous is hot, the broth will start to boil immediately. Give is a quick stir and put the cover on the pan.
- Remove from the heat and let stand for 5 minutes. After the 5 minutes, fluff the couscous with a fork.

Steps:
- Combine 2 cups hot water and raisins in small bowl. Soak raisins until softened, about 15 minutes. Drain water into large saucepan; reserve raisins. Add 2 tablespoons butter, wine, and saffron to pan; bring to boil. Stir in couscous. Cover, remove from heat, and let stand until liquid is absorbed, about 15 minutes.
- Meanwhile, melt remaining 2 tablespoons butter in medium skillet over medium-low heat. Add onion; cover and cook until translucent and tender, stirring occasionally, about 8 minutes. Mix onion, reserved raisins, almonds, and cinnamon into couscous. Season to taste with salt and pepper and serve.
Tips:
- Choose the right couscous. There are three main types of couscous: Moroccan, Israeli, and Lebanese. Moroccan couscous is the smallest and most common type, Israeli couscous is medium-sized and has a slightly chewy texture, and Lebanese couscous is the largest and has a nutty flavor.
- Toast the couscous before cooking it. This will give it a nutty flavor and help prevent it from becoming gummy.
- Use a flavorful broth or liquid to cook the couscous. This will add flavor to the dish and help keep it moist.
- Add vegetables, nuts, and dried fruit to the couscous for a more flavorful and nutritious dish.
- Serve the couscous warm or at room temperature. It can be served as a main course or a side dish.
Conclusion:
Couscous is a versatile and delicious grain that can be used in a variety of dishes. It is a good source of fiber, protein, and vitamins, and it is also relatively low in calories. With its nutty flavor and chewy texture, couscous is a great addition to any meal.
