7 oz. baby bellas or white mushrooms, thinly sliced
1 Tbsp. olive oil
1 lb. ground turkey
3 garlic cloves, minced
1 tsp. paprika
1 1/2 cups chicken broth
2 Tbsp. all-purpose flour
1 Tbsp. Worcestershire sauce
1/2 cup full-fat sour cream
2 Tbsp. finely chopped parsley
12 oz. dry egg noodles, cooked per box instructions

Steps:

  • In a 12-inch non-stick pan, melt butter over medium heat. When hot, add onions and mushrooms. Cook for 7-10 minutes, stirring frequently until browned. Remove to a plate.
  • While the mushrooms are cooking, add chicken broth to a small bowl or measuring cup and gradually whisk in the flour until smooth. There should be no lumps. Set aside.

1 medium spaghetti squash (about 4 pounds)
1 pound lean ground turkey
2 cups sliced fresh mushrooms
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup white wine or beef stock
3 tablespoons cornstarch
2 cups beef stock
2 tablespoons Worcestershire sauce
1 tablespoon Montreal steak seasoning
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 cup half-and-half cream
Optional: Grated Parmesan cheese and minced fresh parsley

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high until tender, 15-18 minutes., Meanwhile, in a large nonstick skillet, cook the turkey, mushrooms and onion over medium heat until turkey is no longer pink, breaking it into crumbles; drain.
